Introduction

The first stop on day two was at Signorello Estate for a lunch wine and food pairing. We were greeted by estate sommelier Ronald Plunkett. We started off the tour with a glass of a white blend named “Uvaggio”, which was fantastic. This was then followed by an ATV tour of the estate. The Estate is a beautiful property, which sits on three different soil types and has three different micro climates. They grow a number of varietals, which include Cabernet, Chardonnay, Cab Franc and Viognier to name a few. The chardonnay vines were planted in 1980. The Chardonnay that is produced does not go through full malolactic fermentation, so they present with a nice crisp taste of green fruit with proper acidity. After a tour of the vineyard, we sat down for an epic 5 course tasting. This was the best food and wine experience of the trip and one of my top 5 wine and food pairing experiences! The lunch pairing is a must if you are visiting the estate! The food and wine was just amazing!

A really interesting white blend, which is a yellow straw color. Uvaggio Estate contains 4 different varietals, which include Semilon, Chardonnay, Viognier, and Sauvignon Blanc. The nose has nice aromas of pear, almonds, lemon grass and additional floral notes. The wine has very nice acidity and is light to medium in the mouth. A nice crisp flavor of pineapple, pear, minerals, and tart apple. A very nice finish. This was a really interesting wine! A wine that was enjoyed by everyone in our group. A nice surprise! I would drink this over the next 5 years. Score 92

A blend of 58% Sauvignon Blanc and 42% Semillon. A yellow straw color with scents of candied orange, honey suckle and grape fruit. Nice crisp acidity and flavors of crème fraiche, grape fruit, tropical fruits and some mineral notes. The wine complimented the dish, which was a pan seared jumbo prawn with fennel, lemon and capers. The dish really made the wines tropical notes and acidity pop. Score 91

A very nice chardonnay that was a beautiful gold color. A wonderful aroma of apple crisp and white peach. The taste was fantastic with flavors of caramelized apple and peach. The wine had a really nice silky finish. A very well made Chardonnay with only partial malolactic fermentation. Very good structure and acidity. This wine can age another 10 years. Score 94

Flight 4 - Course 3: Pinot Noir Las Amigas Vineyard & Roasted Salmon (1 note)

A translucent garnet red and did not appear to be overly extracted like most California Pinot Noir. The nose presented scents of warm cherry jam, orange zest, and a little wet stone. The taste provided nice acidity and paired well with the salmon in bacon sauce. The wine flavors on the palate consisted of cranberry, strawberry and minerals. This wine had a Burgundy vibe on the nose and palate. Drink over the next 5-7 years. Score 92

A blend of 87% Cabernet Sauvignon, 7% Cab Franc, and 6% merlot and is aged in French oak. The color was a dark ruby red with very nice viscosity. A nice nose of lavender, leather, and red dark fruits. The taste provided flavors of cherries, raspberry, and a hint of dark chocolate. Score 92.

Dark garnet red in color. The 2013 Padrone Estate is a blend of 92% cabernet sauvignon, 5% merlot, and 3% cab franc. Medium to heavy viscosity. The nose was a mixture of rose petal, black currant, blackberry and earth. The taste provided flavors of dark fruits, vanilla and a hint of black cherry. A nice luscious finish. The wine was structure well and had very nice tannins, which paired well with the Wagyu grilled meat. This wine is built to age. A nice wine from a great vintage. Age another 20-25 years. Score 94.

Closing

Highly recommend doing this tasting on a visit to Napa. The food and wine pairing was impeccable! An amazing experience with a group of friends or alone as a couple. A great display of very nice wines and very delicious food! We all had a great time! Lastly, the Vielles Vignes Estate Chardonnay is up there with Hanzell and Stony Hill! This will be a staple chardonnay for me going forward!
