Flight 1 (1 note)

White
2006 Capercaillie Sémillon 'The Creel' Australia, New South Wales, Hunter Valley
89 points
Still ridiculously young and showing no signs of developing that lovely classic oily Hunter Valley semillon traits - not sure if that is because it is under stelvin or whether it is just ageing at a glacial place. Still crisp, clean and young.

I really liked this and it was absolutely fantastic with the BBQ'd prawns for the first course.

Flight 2 (3 notes)

White
2000 Tyrrell's Chardonnay Vat 47 Australia, New South Wales, Hunter Valley
90 points
No formal note as drunk with Christmas lunch.

This was golden in colour and had developed nutty, tertiary flavours as you would expect from a white 17 years in age. Lovely match with the roast turkey.
Red
2000 Pavillon Rouge du Château Margaux France, Bordeaux, Médoc, Margaux
93 points
No formal note as drunk with Christmas lunch.

This was to my mind, still showing far younger than you would expect from a second wine 17 years in age. Lovely match with the roast turkey although the wine was probably served a degree too warm. This has years left in it, although can be enjoyed now with a decant.

My favourite wine of the day.
Red
1991 Lindeman's Cabernet Sauvignon St. George Australia, South Australia, Limestone Coast, Coonawarra

No formal note as drunk with Christmas lunch.

From magnum, and still showing very young for a wine this old although I would drink up as even in magnum this is getting towards the end now. Probably served a degree too warm and could have done with a brief decant.
