Apple, lime, pear and slate notes on the nose. Lovely richness across the palate, with punchy fruit power, while still showing the signature acid profile of Salon. Finds balance within its components right now, a relatively approachable young Salon. Not entirely what I expected, but an enjoyable encounter.

Honey, ginger, lemon and some oxidative notes. Really good freshness and lift on the palate, leaving it feeling really brisk. Doesn't have nearly the depth of a bottle tried earlier in the year, but it was still very good regardless.

Toast, lime, apple pie, vanilla and ginger on the nose. Full powered on the palate, very much within the house style. Excellent mix of power and precision, the richness of the flavours driven along the palate by lovely acidity. Lovely stuff.

White florals, orange, toast, spice and some brioche. The palate is super clean and fresh with fantastic precision and real delicacy around it. The fruit has power but it is more restrained than the bolder 2002 version. Superb drinking.

Lemon, persimmon, floral, orange and spices on the nose - plenty of interesting things going on. Palate has lovely flow, with very good acidiy lending the wine a feeling of purity. A very small dab of residual sugar helps this gain the right balance. Plenty of time remaining to drink this wine.

Raspberry, cherry, aniseed, earth and truffle - really wonderful complexity, the best nose of the Burgundy wines tonight quite easily. Palate has great class, with lots of fine detail. The fruit is held back and while the structure is there, it doesn't intrude. This has a huge amount of potential and is one of the more impressive 2005 Burgs I've tried in recent times.

Medicinal, spice, meaty and spicy notes, perhaps tinged by leather as well. Quite soft on the palate, the fruit is mellow and it finishes reasonably long. Possibly not a great bottle, but I was happy to drink it anyway.

Five spice, bay leaf, stalk, cherry and licorice aromas. There is a stalky streak on the palate as well, but the fruit does an excellent job of working together with it and finding good balance. Plenty of acidity, though this calms down with time in the glass. Really good combination of spice, red fruits and herbs. Just getting started, but really lovely.

Game meat, stalk, orange peel, tobacco and tea leaves, along with some chocolate. Lifts quite a bit with air time, showing off more and more complexity on the nose. The palate is the usual delicate Rayas style, with red fruits and some fine tannins throughout. Really elegant and fine. Won't be a superstar vintage of Rayas, but excellent in its own right.

Raspberry, graphite, redcurrant, earth and spice. Rich and bold on the palate, tannins have a similar powerful presence. Still very young and has a lot of potential once the intensity is tamed. Has all the elements present to get to that point.

Earthy, cherry, autumn leaves, roses - more emerged with air, with the components taking on extra definition. On the palate, we see good structure still, with the fruit holding on but not being particularly assertive. It might be with more time the palate would have picked up as well, but it was just not happening with the same speed as the nose.

Smoke, blueberry, cedar, spice and blackcurrant - a tobacco note as well with some time in the glass. Superbly composed on the palate, the flow is impeccable, with pure black and red fruits leading into a very long finish. This feels more fruit forward than the last bottle of this that I had about 10 years ago and would have more time on its side as a result.

Plum, raspberry, blackcurrant, peppery and with dark floral notes on the nose. This just gets better and better with the more air that it gets, was lifting right up to the last sip. Fine acidity and tannins, excellent persistence, with medium fruit density and the aforementioned structural notes controlling and focusing the wine really well. Super classy and delicious wine.

Pineapple, lime, orange, mandarin, lemon and grapefruit on the nose. The palate has a real sense of delicacy and poise. Tangy acidity lifts the wine up with the sweetness siting in the background. Very good length, this is still very primary. I thought I'd be blown away by this, it didn't get there but was still excellent - perhaps more time will give it that extra interest to take it to the next level.
