Blind tasting with the traditional Lutefisk (stockfish of cod soaked in lye, and then baked)

Flight 1 (3 notes)

White - Sparkling
N.V. Hattingley Valley Classic Reserve United Kingdom, England, Hampshire
91 points
Blind. Smell of mature fruite and some development, brioche, a hint of nuts; moderate plus dosage, balanced, very fine length, quite full, moderate acid. Likeable.
White - Sparkling
2013 Ulysse Collin Champagne Blanc de Blancs Les Enfers France, Champagne
92 points
Some definite yellow to it, a lot of initial mousse; relatively muted nose, some mature yellow apples; high acid, long, some complexity to the finish, big moutfeel. Hesitant as to how robust this wine will over the next decade. Two bottles have shown this rather advanced stage.
