Introduction

I started looking at the ullage of several bottles and decided to open then and do an obituary if necessary. Most were 1/4 inch into the shoulder, three had some signs of slight leakage. I ended up with six bottles. I opened three worst on Sunday and was delighted with the wines. I gassed them and called a friend join for a tasting of all six on Monday. Adding a 1999 RM CSR in good condition as a benchmark.

Flight 1 (3 notes)

Did not expect that much as these three had the worst ullage and corks. Using an AhSo the corks all came out intact. They were far better than I expected so I call a friend Jim to join on Monday afternoon and taste the entire set. These bottled I gassed and left for the next day. My note is from the first day with a comment on the second tasting after a day

Making room in the cellar, have hung on to this for sentimental reasons, it is from the period of George Vierra and John McCay running the winery. The wine has both Fay and Volker Eisile vineyard Cabernet as part of the blend and the pedigree is excellent. Anyway the ullage was creeping out of the neck, so I half expected to taste it and consign the balance to vinegar stack, wrong!

Yes, it is aged but the color is more garnet than tawny and the Cabernet flavors true and correct. Still has good structure and acid balance. Only 13%. More than a memento it is quite nice and has nice personality that lives iup to its heritage. No score but it is very nice. Think 93+

Going through my cellar looking at wines that the ullage is starting to creep out of the neck, this was one. About a 1/4 inch out of the neck the cork was tired but extracted in one piece.
Still garnet not tawny, still has muscle and personality. Definitely aged but also definitely not OTH. Hints of brett that blew off, wish we made wines like this now 12.5% alcohol. Tons of character and life.

Pulled for ullage, 1/4 inch below the neck. I am tasting this because I need some space in the cellar (I also have more). Very vital with no age showing in color, solid nose and structure. This the third of seven bottles I pulled because of ullage, so far three have been excellent and two into a dj for vinegar.

We made some nice wines in those days.

Using an AhSo the corks all came out intact and were tasted immediately after opening the 1999 CSR was included as a benchmark.

Opened as a benchmark to compare to six other bottles, this is a wine that fully demonstrates the reason aged Cabernet has a mystical reputation. An awesome bottle of wine, fruit, power, intensity, acid balance, weight and soft tannins. Easily has more years. From the ripe but not super ripe period of Cabernet winemaking. 14.5% alcohol.

By comparison to the rest of the lineup tasted last night the aromatics are mote toward mint and ripe tomato than briar berry but just as intense. Plenty of life left in the wine but the structure is more modest that the other wines. Time to consume as the end of the road is in sight.

Very evolved and soft but there are still ripe briar berry flavors. Holding its own but there are no reasons to to age further.

Bit reduced at first, very ripe flavors, a nice personality but very distinct versus the Napa Cabernets opened in comparison. I would not call this a Paso characteristic, but is a softer almost sweet ripe tomato flavor, quite lovely. Still has life.
