Flight 1 - Carpaccio from Salmon and Scalop (1 note)

White
2015 Rudolf May Retzstadter Langenberg Himmelspfad Silvaner Großes Gewächs Germany, Franken
*** brief notes form wine & dine, no rating ***
Wow! Deep, smoky, complex and multilayered nose. Ripe fruit, white pepper, smoky, good acidity, long and lingering finish. Has at least 3+ years upscale potential. 92+

Flight 2 - Tartar from Veal and Tuna (2 notes)

White
2014 Château Simone Palette Blanc France, Provence, Palette
*** brief notes form wine & dine, no rating ***
Tasted blind. Thought at first Chenin from Loire. A bit vegetal notes in the nose. On the palate rather lean and cool climate. Never thought southern France. My first Simone: Really nice and with lots of potential for another decade. 92+
White - Sparkling
N.V. Dhondt-Grellet Champagne Premier Cru Les Terres Fines Blanc de Blancs France, Champagne, Champagne Premier Cru
*** brief notes form wine & dine, no rating ***
What an interesting Champagne! Tasted blind. Lots of green and mellow apple in the nose, therefore I thought some kind of sparkling Cidre 😊 On the palate very fine mousseuc, beautiful pressure and good texture. Long, fine and lingering. Lovely experience! Thank you Thomas! 91

Flight 3 - Turbot ravioli (1 note)

White
2014 Domaine Francois et Antoine Jobard Meursault En La Barre France, Burgundy, Côte de Beaune, Meursault
*** brief notes form wine & dine, no rating ***
Deep nose, a bit reductive, noticeable toasting. On the palate nice yellow fruit, medium+ acidity, a bit unbalanced. Overall a bit nervous, but nice. Certainly not at its peak. Give it a few more years. Good finish. 91+

Flight 4 - Medium rare venison (1 note)

Red
2007 Bernhard Huber Sommerhalde Spätburgunder R Germany, Baden
*** brief notes form wine & dine, no rating ***
Perfect German Pinot at its full peak. A bit leaner/cooler than its sibblings. Good acidty, well balanced, nice length. 90-91

Flight 5 - Cheescake with passion fruit sauce (1 note)

White - Off-dry
2003 Joh. Jos. Prüm Zeltinger Sonnenuhr Riesling Spätlese Germany, Mosel Saar Ruwer
*** brief notes form wine & dine, no rating ***
Wonderful Prüm from a warm vintage. Interesting, reductive nose with fine petrol notes and ripe yellow fruit. On the palate lots of warm, ripe fruit, but also with a ripe, wonderful integrated acidity. Well balanced and a lovely match with the Cheescake with passion fruit sauce. 90-91
