Half bottle. Pale straw. Nicely saline nose, finely chalky, reasonable zing. Feels ready. This is classic, and very good Chablis if not absolutely top flight. Good length with some cut. ****

Half bottle. Still a touch of purple to the cherry red. Recognisably pinot, quite dark fruited, perfectly pleasant, indeed very drinkable, if a little innocuous, but that’s good from a food accompaniment perspective. Nicer than I’ve just made it sound! Solid ***

Deep and very bright old gold. Positively shimmering in the glass. Huge nose of apricot and passion fruit. Hugely sweet, but it does have the acidity behind it. This goes on and on. Suspect this is one to drink in its fresh and vibrant youth. ****

Faded brown, more burnt sienna than tawny. Sweet but with a savoury mellowness. Unsurprisingly goes very well with the 100% Cocoa chocolate soufflé. Lots to like here. ****
