Wine Cellar & Al Fresco Dinner Party

Introduction

One of life's delightful experiences is hiding out in a cool wine cellar on a late summer afternoon, then dining al fresco in the balmy night air. We had the perfect weather forecast and kept things relatively simple. What turned out was a special dining experience with two of our dearest friends.

Flight 1 - Charcuterie with Champagne in the Wine Cellar (2 notes)

We started our evening in the cellar ("La Cave d'Argent"), where two vintages of Dom Pérignon were served with charcuterie. Both vintages were stellar.





White - Sparkling
1998 Moët & Chandon Champagne Cuvée Dom Pérignon France, Champagne

From a bottle that was purchased upon release and cellared under ideal conditions, this 22-year-old Champagne exhibits amazing verve. Sporting an active tiny bead and a bouquet of citrus, pit fruits, brioche, almonds, walnuts and white flowers, it is a medium-bodied, vibrantly acidic sparkler with flavors that mirror the aromas. Solid on the middle palate and finishing with good length, this is a delicious Dom that is showing beautifully. Drink now-2023.

2008 Dom Pérignon Champagne France, Champagne

The 2008 iteration of Dom Pérignon is truly a tour de force, with precision and depth that is in the league of its 1996 sibling. Light golden and impressively vibrant, it has a vigorous tiny bead that creates such a stir on the palate. Loaded with lemon, white peaches, green apples, bread dough, marzipan and crushed rocks on both the nose and palate, it stays mouthwatering and delicious throughout a solid mid-palate and a finish that lingers on and on. This should have substantial longevity...all of the building blocks are in place! Drink now-2040.

Flight 2 - "Surf & Turf" with Old and New World Wines (4 notes)

We transitioned with 2008 Dom in hand to the back yard, where we enjoyed the two white Burgundies and two Napa reds with cedar-planked wild king salmon and grilled prime New York strip steaks. Accompanying the proteins were potatoes au gratin, fresh Buffalo mozzarella with heirloom tomatoes and sourdough French bread. Fortunately the grilling was a success, as were the wine pairings.

Purchased upon release and cellared in pristine fashion, this medium golden Chardonnay has matured beautifully. Without even the slightest hint of oxidation, it delivers a vibrant payload of lemon curd, pit fruits, jasmine, wet stones, chamomile and vanilla bean. Medium-bodied, freshly acidic and with well-integrated alcohol (listed as 13.5%), it weaves in a complementary aliquot of oak and stays solid on the mid-palate. Lingering nicely on the back end, this is at its apogee. While it is always a gamble with respect to white Burgundy and the oxidative process, those holding well-cellared bottles of this wine will potentially be very pleased. Drink now.

Purchased upon release and cellared under ideal conditions, this medium golden Meursault continues to flaunt citrus, pit fruits, coriander and wet stones on both the nose and palate. Medium-bodied, freshly acidic and with nicely integrated alcohol (listed as 13%), it stays dense in the middle, shows no evidence of premature oxidation and finishes long. Those holding well-cellared bottles will find them to be most enjoyable over the next 2-3 years. Drink now-2023.

From a bottle cellared in pristine fashion, this 14-year-old blend of 95% Cabernet Sauvignon and 5% Petit Verdot still retains a youthful, deep ruby color. Teeming with black currant and dark bramble fruit, it adds notes of tobacco leaf, graphite, dried herbs and allspice. Full-bodied, freshly acidic, seamlessly alcoholic (14.5%) and with gorgeous purity of fruit, it wraps its flavors with plentiful silky-textured tannins and a judicious dose of toasted oak. With excellent mid-palate density and a lengthy finish, this is a structured Insignia that is early in its drinking window. Well-cellared bottles should sail through this decade and well into the next. Drink now-2035.

2008 Screaming Eagle Cabernet Sauvignon USA, California, Napa Valley, Oakville

Tasted from a pristinely cellared bottle, Screaming Eagle's 2008 is showing beautifully. An opaque ruby blend of 88% Cabernet Sauvignon, 7% Cabernet Franc and 5% Merlot, it opens within one hour in decanter to reveal a bouquet of cassis, black cherries, melted licorice, mulling spices, espresso and lavender. Full-bodied, fresh and without any heat from its 14.8% alcohol (when served at 60-65°F), it delivers flavors mirroring the nose and stays impressively dense on the mid-palate. The wine's tannins are plentiful but fine-grained and the oak is well-woven. Finishing with magnificent length, this is classic-quality in every respect. The "stuffing" is clearly in place for well-cellared bottles to have significant longevity. Drink now-2033.

Flight 3 - Dessert with Sauternes (1 note)

Our final course consisted of grilled nectarines with "popcorn" ice cream, a sweet treat that was beautifully complimented by the Château Suduiraut.

Sampled from a 375 cc bottle that was purchased upon release and pristinely cellared, this medium rust-colored elixir is firing on all cylinders. Sweet and beautifully botrytised, it delivers aromas an flavors of nectarines, honey, orange marmalade, bananas, pineapple and crème brûlée. Medium-bodied and with plenty of acidity to balance its sweetness, it coats the mouth from attack all the way through an impressively lingering finish. Comparably cellared specimens of this classic-quality Sauternes should provide immense joy for many years to come. Drink now-2035.

Closing

In summary, our evening was a success. The wine and food were fantastic, but the best part was being able to spend time with our cherished friends. We can't wait to have another wine and food "journey" with them again soon!
