Introduction

Great pair of Gaia, and 2009 Burg Red

Flight 1 (6 notes)

White - Sparkling
2009 Bollinger Champagne Millésime Brut 007 James Bond France, Champagne
91 points
PnP. Nice and smooth drinking but not different from typical Bollinger. Great for party
White
2013 Domaine Henri Boillot Puligny-Montrachet 1er Cru Clos de la Mouchère France, Burgundy, Côte de Beaune, Puligny-Montrachet 1er Cru
93 points
Bottle breathe for 2 hours +. Full body with smoky nose, the palate is filled with citrus, honey and long finishing.
Red
2009 Domaine Ponsot Chapelle-Chambertin France, Burgundy, Côte de Nuits, Chapelle-Chambertin Grand Cru
94 points
Bottle breathe for 2.5 hours and it's ready to service. The nose is feminine and elegant. The palate is not full body but smooth and mature. Medium finishing.
Red
2009 Domaine Francois Lamarche Grands-Echezeaux France, Burgundy, Côte de Nuits, Grands-Echezeaux Grand Cru
92 points
Bottle breathe for 1.5 hours, then another 2 hours at the restaurant. Still tight. We needed double decant before serving. The nose is quite reserved with little scent of flower, but the palate is tight and ruggy. Not until the very last sip (about 1.5 hour in the glass), it started to open with sexy nose with perfume, cigar, violet and smoke. The palate becomes complex with earthy, tar and violet. Medium finishing. Tempted to give it a try again!
Red
1971 Gaja Barbaresco Italy, Piedmont, Langhe, Barbaresco

Double magnum. Opened the bottle 9pm a night before (taste of sour, flat with little fruit - still alive), and put the cork back on. Tasted again at 3pm (18 hours after opening), the wine is still a bit high acidity, but the fruit came out nicely. Double decanted half of the bottle, and put it back with cork left opened until 6pm (21 hours after). The bottle is ready with another 1 hour of bottle breathe, with violet and cheery nose, full body, integrated fruit and perfume with long finishing. The 76 Gaja Barbaresco was also nice, but the body was thinner with less fruit. Great line up

Bottle breathe for 1 hour. The nose is obvious with dried flowers, plum and elegant fruit. The palate is integrated tannin with little fruit left, with some Chinese herbs and smoke. Very nice given the age. This is obviously different from the 1971 on the same night. And I loved both!!
