A blend of 30% Grenache, 30% Mourvedre, 10% Syrah, 10% Counoise, and the balance split among the other permitted varietals of the appellation.
Friends came to our house for a dinner on the patio overlooking the Pacific. This was the first experiment with Chateau Beaucastel. We had two bottles of the 2001.

Decanted for 6 hours.
Color: Inky, ruby.
Aroma: dark cherries, plums and blackberries.
Palate: Smoked meats, prune, earth and mineral, with hints of truffles.

The vintage was very light like a Pinot Noir showing very well. Hard to believe it is 16 years old. I wish I had two more bottles cellared. It was enjoyed by all!

2006 Syrah En Chamberlin was my first wine from Cayuse. I purchased it in October 2008. My first bottle from that 3 Pack was opened in 2010. The only thing I remember about it was it tasted young. The second bottle was opened in 2012 and it was still too young. My last bottle was opened in 2014 at eight years old. The same thing occurred. What would it take for this wine to come into its own?

With my 2007 En Chamberlin I wasn’t going to waste my time with anything under a decade! I don’t know when it happened but between nine or ten years it blossomed into the most gorgeous Syrah that I’ve ever had, pure silk. This definitely had that WOW factor!

Decanter for 3 hours.
Color: Deep garnet purple.
Aroma: Smoked meat, espresso, violets and trademark Cayuse funk.
Palate: Iron minerals, olives tapenade, beats and blueberries.

This was worth the wait. My personal feeling is that you have to be patient with Cayuse El Chamberlin and give it time to mature and with the next decade, it will keep evolving. I wouldn’t be surprised if it was still drinkable for three decades.

This is my favorite Spanish Grenache. I always look forward to its’ arrival. As a 100% Grenache, the wine is rich and powerful. The strongest attribute of Grenache is the adaptability to so many foods.

Decanted for 3 hours
Color: A lovely clear pale ruby.
Aroma: mangos, vanilla, lovely sweet mocha.
Palate: beets, blueberries, prunes, plums and black licorice.

A very well made wine with great balance and is approachable at an early stage.

Second day:
On the second day, I noticed a heavy dose of alcohol on the nose which wasn’t there the first day. Because of the alcohol strength, l am going to cellar this case for 5-8 years. I will test the next bottle sometime in 2020 and see how it’s doing as I truly expect this vintage to only improve with the passage of time.

Tasted at Larry & Janet’s home. Not only was this a stunning vintage from Washington State, but with eleven years of cellar time, it truly sang on the palate! I am trying to give all of my Cayuse wines at least a decade years of cellar time which has at times proved to be almost impossible! After tasting, I believe this vintage could have remained in the bottle another ten years with no problems. Twenty four hours after decanting, there was much life left in the tasting.

Decanted for 2 hours
Color: Black ink
Aroma: blackberries, licorice and campfire smoke
Palate: dried meat, prunes, plums and green olives…just unbelievable texture.

The Temranillo had an excellent sixty second finish with very little “Cayuse funk”. It is simply a delicious wine now positioned in my to five Cayuse favorites. My only regret is that I wish I had six more bottles in my cellar aging to perfection!

This vintage was FULL of wonderful fruit from the usual suspects (apples, grapefruit) but then there was lovely guava and passion fruit! What a pleasure to sip something so light and yet so satisfies. It will be a wonderful accompaniment to cheeses and meats and delicious enough to be enjoyed with white fish. This is a great summer wine that I thoroughly enjoyed!

A wonderful evening spent with my good friend Hugh at La Dolce Ristorante in San Jose Del Cabo, Mexico. Dining outdoors under the stars and trying a new wine…what could be better?!! Color: Dark Ruby. Aroma: The scent evolved from a slight tomato and celery at opening to a faint memory after two hours. Tasting Notes: First presentation to the palate was one of dark tea not strong but definitely present and the finish was a real pleasure,,,longer than I expected and certainly encouraging another taste.

So enjoyed this wine with good friends, and a truly southern style dinner…fried chicken, creamed spinach, mashed potatoes and gravy with baking powder biscuits and honey butter Color: Pale and not unlike a wonderful bottle of champagne Aroma: Had a hint of pitted fruits…peaches, plums and even mango. Tasting Notes: light and full bodied with a hint of sweetness possibly coconut drying on the palate.

This wine was a delightful surprise! Color: Deep purple. Aroma: Dark berries, spice, vanilla and chocolate. Tasting Notes: With lots of fruit forward and still there are dry characteristics not to be missed. Silky smooth with hints of red licorice, strawberries and vanilla. We had it with pizza and it was a wonderful mild flavor in contrast to the pizza loaded with peppers.

Color: Light straw. Aroma: Slightly muted but fresh, citrus, honeydew melon. Tasting notes: Tropical fruit mixed with fresh fruit with a creamy texture filled with lemons and lots of flavor. As mentioned, there is a lot of citrus with a strong acid aftertaste that is not to my liking.

Decanted for 5 ½ hours.

This was a nice change of pace from most Washington State Syrahs with very little fruit essence. Color: Cranberry red. Aroma: Cotton candy, currants and plums. Tasting notes: The palate carried a solid core of minerals, smoked meats and some watermelon. A wonderfully silky smooth mouth coating with a great deal layering structure. Somewhere in the finish there is a faint hint of lemons and limes.

We first tried this wine in November 2010 at the winery release. It was popped and poured at this time. This young wine tasted very much like a Cabernet Sauvignon but very thick and chewy.

50% Grenache, 30% Mourvedre, 20% Syrah

Decanted for 6 Hours… Wow what a difference 6 hours makes! A classic Rhone blend. Color: Deep ruby. Aroma: Blueberries, dark cherries and almonds. Tasting notes: Dark cherries, caramel and licorice. It is an elegant feminine mouthful that is enjoyed for a full 30 seconds! We paired this wine with Mexican Arrachara (flank steak marinated in spices).

This is I believe is the finest Argentina Malbec I have tasted to date! A well structured wine has occurred in a relatively short period of time. Who knows how good it can be with 6 to 8 years of cellaring Color: Inky black. Aroma: Ripe blackberry and blueberry all surrounded by caramel and violets. Tasting Notes: blueberries, coffee, vanilla, and dark chocolate leading to a nice long finish…..

I really liked this wine! It went well with rotisserie pork tenderloin. An enjoyable drink, with maximum aging of no more than 4 years Color: Deep purple. Aroma: a very nice bouquet of plums, raspberries, lavender and spice. Tasting notes: Layered flavors that firm up and gain complexity toward the finish. Black pepper, vanilla and espresso with a 30 second finish. This was a pleasure to drink and share with friends!

Looking at this bottle of wine it appears to have everything I like in an inexpensive bottle of wine… a blend (Shiraz, Cabernet Sauvignon and Merlot) and screw cap! I was very excited to try this….Color: Dark Ruby. Aroma: Dried fruit with a hint of strawberry jam and prunes. Tasting notes: Lack of fruit was very evident with a whole lot of oak & vanilla. The blending of this wine showed a lack of depth. Too much alcohol on the mid palette… the after taste was a good thirty seconds.

It has 21 months since I tasted this vintage. It is aging beautifully with the absence of tannins. The wine is blending nicely with all the below mentioned qualities enhancing as time has gone by. This full-bodied Cabernet Sauvignon is dark purple in color with aromas of tobacco and currants. It tastes of vanilla, raspberries and cherries. There is a nice structure and is quite balanced. At $9.95 this is a big win for the price!

I really feel that this wine needs an extra three to five years of cellar time. Color: Deep ruby purple. Aroma: Smoked meats, cherries, and some violets! Tasted at the Waters Winery on November 2009. It had a spice bite too it….now one year later the bite is gone and all the flavors are blending together nicely. I’m definably going to put my other bottles away for three or five years! Color: Deep purple. Aroma: Campfire Smoke and pencil lead. Tasting notes: Spice box, blackberry and blueberries. In my humble opinion, this is a good solid wine for $30.00 to $35.00 dollars! Since the actual price is $53.00, I will pass on buying any more. A $50.00 to $60.00 wine should be hitting on all eight cylinders, and this one falls short of expectations.

This is a very difficult wine for me to discuss as I really didn’t care for several of its’ qualities and then on the other hand, there were a few redeeming qualities I did like. Somewhere on the mid palate, there was almost an acrid taste. Once that most disagreeable event occurred, the lingering aftertaste was delicious! I have yet to taste another Washington wine like it. Pop and Pour. AMAZING WINE!...I really like this wine.

Color: Light golden yellow with medium to high viscosity. Aroma: Complex and seductive nose boasts a basket of citrus fruits including honey, lime, melon with a hint of Grapefruit. Tasting Notes: apricots, pear and lemon and spices. Very well balanced, acidity has a firm presence yet it does not dominate the palate. It boasts a lingering, long clean finish.

This wine is a golden straw in color with an aroma deep with citrus flavors predominately that of peach and grapefruit. The first taste leaves a residual on the tongue of lemon with a hint of honeydew melon. The acidity strikes a nice balance and leaves a very smooth finish that is enjoyed for much longer than expected. I enjoyed this with a wonderful dinner of marinated Asian inspired grilled chicken and it truly was the perfect wine!
