Had put my last bottle of the 07 aside for some time to see how it would evolve. The aromas of strawberry, cherries, flowers, spice, and clove were still evident but much more elegant in taste as the sweetness had calmed down. Very happy to have let this rest.

Have historically loved the taste/quality of 1999 but this bottle is clearly on the downside of it's life. Overall structure still present but ... If still in your cellar, would suggest thinking about moving it up towards the front of the "drink now" list.

18 months since popping our first of the 07 Cab finding it to open up well but still in need of decanting for at least an hour. Well worth drinking now and will only get better with a bit more time.

Decant for at least an hour to allow it to open up. Wine is hitting the end of it's run so would sugget breaking your out of the cellar soon.

Decant for at least an hour; two would be better. Think this wine has "crested the hill" so would suggest moving this up in the rotation if still in your cellar.

A little too early for this one. Best to keep in cellar for the time being. If you must, open it up and decant for at least a few hours if possible. Other recent reviews are spot on regarding "heat" at this stage.

A bright and fantastic pinot now but will only get better with a few more years in the cellar. Decanted for an hour and it was ready to go. Paired well with Italian dinner as the feature of the evening. Haven't had this since our visit to the tasting room but am sooooo happy to rediscover it's qualities this evening.

Still developing but is tasting great at this time. Nice hints of pear and apples. Pleasant and consistent rolling across the palate. Pared well with tray of various cheeses and fruits.

Dark ruby in color. Complex but not overpowering to meal. Paired well with New Year's Eve dinner of filets, alaskan king crab, etc.

Sweet overtones of pear and citrus. Second sip better than the first. Paired well with grilled figs and cheeses. Great now but believe that it's peaked / peaking. Time to drink is now.

Happened to find this hiding in the wine cellar. Decent but nothing memorable at this point of time. Nice tones of pear and apple. Not overly "oaky". Going well with cheese assortment on warm Labor Day afternoon on the patio. If you've got some left, I would consider drinking it now.

Decanted for an hour before drinking as others had suggested. Found it to open well and be balanced with overtones of varied fruits. Lightly oaked and acidic in nature. Deep rich color at this time and found to have nice tannins and be well balanced. Nice dinner wine with chicken and / or beef. Drinking well at this time.

Well-balanced and enjoyable. Depth of flavors and appearance found pleasant. Dark in color with fruit/berry tones. Decant an hour before consuming. A great bottle for it's price point.
