One of the better young Caymus' i've tasted in the last 7 years. After 1 week, it turned into dark ink. Better the first night. More harsh and less special after a week even though it was vacu vinned.

    3/30/18, 11:09 AM - I only vacu-vin and store in the fridge. The cold and lack of air keeps the flavor from changing too much and keeps the wine longer. I wouldn't lay it on it's side - always upright.

Good with rich buttery carb dishes. I had grassfed steak and veggies instead. The acidity will cut thru it.

Much better tonight. Finished last half the bottle and it was wonderful.

    12/17/12, 8:28 AM - i guess it depends on the food you're eating and your preference. some cali cab tend to be sweet vanilla oaky and very filling. some prefer and are used to that taste. hawley is a simple pleasant medium bodied earthy old worldly delivery...not too rich or complex but solid taste for the price. don't think typical price range from stores taste like this. heat from mine is subdued. even better after a few hours or days. it's my last bottle. again, it's a more unique and hard to find californian especially for an older vintage for the price. however there are other european and south american wines similar at the same price range.
