We’ve been drinking this over the last ten years (well, infrequently, not a sip a month). It is just a really good full-bodied wine, still going strong.

We drank a bottle several years ago, and it had an almost Cabernet like profile. Bottle last night had a wonderfully expressive nose of dark fruit, a mouthful of that same dark fruit, and a nice length. Definitely drinks like a shiraz now. Outstanding. No signs of degrading, but I don't know why you would wait longer to drink this.

Drank at dinner party for international business meeting. Very nice, full body, dark fruit on the nose (even the next day for a bottle that was not finished), smooth mouth-feel with boysenberry and a nice long finish that shows a hint of residual tannin. Just very pleasant, and even more so considering the original price.

This was the second bottle of this we've had, one ours and one from Charlie and Cathy. Both have been superb. Best wine that we have ever had. Medium to full body. Expressive nose. Wagner cab flavor that is pure and almost sweet with it's clarity and focus. Wonderful fine tannins. Only thing that keeps this from being perfect for us is that the killer flavor does not linger as long as you would like considering how good it is.

Still a brooding giant. Dense. Prunes on the nose. A little like drinking ink. This has a long life to live. Should have waited.

Very nice Cabernet. Medium to full body. Lovely nose of dark fruit. Cassis. Good tannins. Not as classic a flavor as the Caymus, but nice.

Nice wine and drinking very well right now. It followed some heavy weights during our Labor Day weekend wine spectacular, so not too many notes, just a pleasant memory that it was good :-)

Drank six of these over the last couple years. Started in 90 point range, but the last three bottles (all in 2013) were absolutely fantastic as the acid mellowed out. Very full bodied for a white, with nice mellow flavors that I would put somewhere in the sweet melon or maybe pear range. Just very lovely. Had a bottle of the 2011 at a tapas bar, and found it very much on the acid backbone side without the secondary breadth of flavor and mouth feel.

The oak is a little dominant right now. Similar to previous vintages, though I like a tad less than '09s and 10's

Spectacular!!! Very full body. Red and Blue fruit coat the mouth. Not sure the tannins are here to make this last a long time, but it is a hedonist's dream right now (for those that love big wine). We enjoyed after dinner. Pretty dominant to pair with food I would say.

Very nice. Too cold when we opened, so took a while to show. Very nice medium to full body, cassis, lots of fine grained tannins. This should continue to grow into itself nicely.

Drank two bottles with friends from work. It was well liked by even those who are not CdP or French wine appreciators. Medium body, still has some nice fruit, not so many secondary flavors yet.

Maybe the best of the bottles of '07 that we have had. It really sang with classic Caymus cassis flavor, smooth mouthfeel, and very nice length. Lovely with grilled dinner. It followed a Tuscan blend and was a brilliant contrast.

Very nice wine. Somewhere between Northern Rhone and Paso Robles, with good primary dark fruit flavors, a little iron, and a nice pepper taste at the end. Tannins nicely integrated for a smooth mouth feel. This will last awhile, but is drinking beautifully right now.

Wow. Nose has a little alcohol, but also fruit, when first opened. Very concentrated, full body. Spectacular new world Syrah, with deep blue fruit. Very consistent through 90 minutes of enjoying the bottle. Classic to both Cris and I. Less pepper than a top end Shiraz. Love it.

Not as confusing as the first bottle, but also not as good as I expected. Medium full body. Fairly closed on the nose (popped and poured). Some dark red fruit. Fairly acidic more than tannic, this was the metal that I though I tasted in the first bottle. A nice wine, but probably needs at least a couple more years if it is going to develop into anything more than very good.

Decanted about 1/2 hour. Very nice stage as there is still some red fruit prominent, and secondary meat and leather as the wine opens. Went over well.

Love it. Heavier body than the younger Spatlese that I normally drink. Has not lost anything in the way of acidic structure or smooth, tasty, white fruits. A real pleasure.

We've had about a half dozen of these over the last year, and they have all been really outstanding. Great alone or with food. Lovely balance and structure.

Three bottles consumed over a couple months, scores from 91 to 93. Typical Caymus, meaning that it is very good :-). I like to drink these after dinner in order to enjoy the depth of flavor, but I'm sure that they are great with steak as well.

Beautiful nose. Medium body. Good structure. Goes very well with earthy mushrooms and truffles (as one would expect). Overall, very nice, but not up to the WS rating or ranking at this time.

lovely nose of menthol, lead, and anise. Still bright red when decanted. med to full body. very fine tannins give it quite a bit of pepper in the mouth. Has a flavor reminiscent of raisins, but a candied flavor comes to mind as well. This would have been dynamite with food.

Drank these two with one of Charlie's. Some bottle variation between them. The best was very open and inviting, with rich Caymus flavor. The worst was still good, but more like a base Caymus (still very good).

The only bad news was that this was supposed to have been an '03. Bought over the internet years ago, and didn't check closely enough when I picked it up at the store. That said, it drank very, very nicely with espresso glazed ham and sweet potatoes.
