Had this with the opening courses of the tasting menu at Dolce Omaha. This bottle has a wonderful minerality to it that adds complexity. I really enjoyed the freshness on the front end that blended seamlessly to a firmer mineral back end. Very pleasing and went well with the salad and fish courses. Drink now till 2016

7/7/14, 6:38 AM - Woody57...My wife and I love Dolce and we are there every month for Chef Anthony's tasting menu. If you see us we are normally the ones with 4-5 bottles of wine on the table. We were their last week and drank Bollinger Brut Rose, J. Rochiolli Sauv. Blanc, 1990 Pape Clement, and a 2008 Paul Hobbs Pinot. Chef is very creative and I call a few days ahead of time to tell him we are coming and he tells me the types of wines to bring and then he surprises us with incredible food.

This is a beautiful bottle from Cathy Corison! The nose had a nice full aroma of dark cherry and plum that didn't overpower. The mouth was full of dark fruit but still silky and smooth. This is in a pretty good spot right now! I didn't decant but had the bottle open for 90 minutes prior to drinking. Drink now to 2016.

My drinking window on Cathy's wines use to be 20-22 years but I have had some older bottles that were certainly better around 10-11 years old. This lead me to an experiment...I opened a verticle for a group of experienced tasters to taste blind of Corison 1993-2007 in February 2013. The group all came up with 9-11 years of age on the bottle was drinking best. This was a costly experiment but I agreeded with the conclusions. That is why I used the drinking window I did but again I sure hope this 2005 last longer because it is a beauty!
