I need more of this in my cellar. Showed great at the end of our Jura tasting, with lots of hazelnut, grapefruit, and salinity on top of the flor and oxidized Chardonnay. Explosive when paired with old Gouda. A completely foreign experience for most of the tasters, but embraced with enthusiasm.

8/18/19, 11:01 PM - I had some Comté out (with about 7-8 other cheeses) during the tasting, but I didn’t try it with the vin jaune specifically. It makes sense, geographically. I did have some with the L’Etoile Cuvée Spéciale, and it was lovely.

Comté hasn’t been in my regular rotation of cheeses at my house, but I will be sure to have some on hand the next time I open a bottle.
