With pheasant n sauce with gin, juniper and cream.
Ok match but this needs more salt and cream to reducera dry tannins.

Think it was better some years ago when it had more fruit.

Decant and aerated for 1h, drank over 2h at 15-18C.

16-19 C, decant needed (but not much) and appx 1-2h. With filet n bea.

Best at start 16-17C with hard cheese. More dry and harsh with the food an18-19 C.

Keep at 15-17, salty meat and decant 1-2h.

Dark berries, tar, pencil lead.

Now sure if it is a drink now or keep 3y.

Finished the bottle!
Still great, aerated for 2h to reach 15C. 17 is best.

Lovely, full fruit of Wild dark berries, earthy, salinity. Smooth tannins and acidity makes it juicy.

Quality and also easy to like.
Matched with chicken, cream, pasta with some dry tomatoes n basil on top.

Coravin. 12C. Riesling glas. With paella.
Really good match.

Fresh and spritzy, tropical fruit, walnuts and chalc.
Improved in umpf, and peaks now and for two year IMO.

Decant needed, 17C. Mufflon potatoes and sardell.

Big on fruit, acidity and balanced tannins.
Great match with brie and thyme flawors Lemon and Dijon mustard match excellent.

Coravin, a sample before dinner to see if it matches.

Very smooth, berries and seductive. Two hours later more complexity adult and grip. Excellent!
Choose to save it for later as it would not match with Mufflon naked potatoes and sardell. (SQN Dark Blosson did the job)

Drink now, keep 15-17, aerate for 90 min. Great!

60 min aerated, 15-17c over 2h.

Wild duck, pumpernickel mash, madeira/truffle sause. Great match.

Blueberry, sweet licorice, viol, full feel and long. Reminds me of Old Sparky but more refined.

I Need a new case!!!

Aerated 90 min, best at 14C. With artichoke soup. Excellent match, but would gi for a more dirty bourgundy next time.

Drinking Well now, Will improve over the next 5 years.

No decant needed, aeration for 30 min and drank over a couple of hours. With elk, lingon berry, mushrom sause. Great match!

Dark forrest floor, dark and red Wild berries. Good grip and acidity. Might improve over the next year or two, but it is excellent now.

A Timber cabin deep in the forrest with a fire and game - feeling.

Think it Will peak 2025 for more mature notes, but very tasty now.

Decant in a big bowl for 2h. At 16-18C.
With grilled entrecôte and lots of sides.
Fruity fresh berries, very cassis. A crowd pleaser.
Solid for 5y.

Rosé - Sparkling
All good but did not sing tonight with the fingerfood. Probably a bit to warm.

PnP with seafood taco a bit Asian inspired.
Balanced, complex with rubber, citrus, honey, pineaple. Good match.

Think it benefits from cellaring a year or two from now, or decant an hour or two.

Drank over 2h, kept at 16 C, decant.

Best bottle of the case so far.
Before dinner with Camembert was really good.

Elk stew with juniper, thyme, and some other. Mashed potatoe, parsley, pickled onions.
Great match, the wine sang. Wild resperry, cherry, Iron rust, sous-bois. All balance, a real treat.

Peaks now - ready!

1h aerated, no decant needed.

Before dinner with Bresaola and Parmesan it was stunning. Long and complex.

With pasta carbonara not a great match. Saved the last glas and returned to it after dinner just with some Parmesan- fantastic again.

IMO - drink now. Best with non dominant food or just with hard cheese. Its stunning!

PnP, 12C. First sip; bee wax, honey, white flower, tangerine, carambola, nettles, tart boysenberry, pineapple candy, lemongrass, mineral, chalc, walnuts. Complex and with soul.

Good acidity fresh. Do not think it will improve and godd for att couple of years. With Kalix roe, but prefered to match with goat cheese. Chèvre chaud could be perfect…try next time

A glas PnP from the sommelier. Could have guessed Sauvignon Blanc from Bdx. Nice wine that should be nice to try in a year or two.

Opened as a second bottle. With white fish, beetroot, butter. Good match.

White flowers, citrus, butter. Should gain some points with more time in the cellar.
Try next bottle 2026.

Closed upon opening but after an hour in the glas it was ready. The rest of the bottle became better during dinner in the decanter.

A fantastic wine, sour cherry mixed with wild strawberry, and some earthy finish. With risotto/white truffle. The mix made my eyes tear of joy.

Big, freash, balanced.Typical Cab n Pauillac. Barolocherry, cassis, black iron soil. 18C is good. Drink over next 10y, peaks 2027-2032.

PnP, with Gruyère pre dinner. Best bottle so far from the case. Might be a correlation with the fact its my first bottle of wine for 12 weeks.

Fizzy, fresh, walnuts, lime, salty, fallen apples.

Dinner: Salmon, parsley, lemon burgers fried in butter and oil. Aioli lime and hollandaise. Both really good. Excellent match.

With pasta bolognese, 15-17C, no aeration, Coravin.
Wow!
Den dark, fresh and complexity. Dark brown lether, full fruit, herbs, tar. Structure but smooth. Barbaresco Gallina in a mix with Napa Cab from Hobbs.

Lovely from now and will benefit from cellaring min 3y. 16C is best

Finishing the Coravined bottle with Halkidiki olives n Comté while making pasta bolognese. No aeration.

Almond, pineapple, minerality, perfume and lime.

Better in the lower temp rather than above 14. A 1-2h aeration should be enough.

Its a WOW and surprised me. Mandarin, lime, smooth, pleasant, long.

Do not expect much improvement, and a seriously good wine.

Walnuts, almond, white flowers, chalk.

Good match as always, but better solo. Next time - take it easy with the garlic…

Licorice root, old coffe, bitter cacao and pine bark.
Red fruit and pencil lead in the background.

Still stunning - dry roses, tar, forrest, spruce shoot.

My last bottle. I think it is time to drink/will not improve if you like more fruit.

Coravin half of the bottle. With garlic bread. 12-16C

Still excellent, and a good match. Bitter almond, oily, tannic?.

Opens up best after 1h, 14C is best. Drink within 3y at this sweetspot.

Decant, waited 4h, with dear, and risotto and mushrooms.

Very long, fills your mouth in every corner. Stays for over 60 sec. Its another level. Not tastier but more deep.

Decant appx 30 min, but it was Coravin’ed 3 w ago.
17-18C. Dear, risotto and chantarelle.

Its stunning with all e dry herbs. Like walking GR20. The herbs and the soil mixed with morells is a Very nice combo. Its like a US Cab in structure, rough and fill of acidity and tannic. In a good way.

Id say drink now and next 3y, but could improve beyond that.

Decanted waited 3.5h. With grilled meat. 18C

When opened the nose was filled with fruit.
Cola, cocus, charcoal and Classic NW cab. Good balance.

Would decant 1-2h next time, prefer below 18.
I preferred Riedel Cab glas, she bigger US Cali glas.

All in balance, tasty and easy going without being boring. With beef.
White - Sparkling
With seafood and lobster at Ostria, Crete.

Very citrus, lemoncurd, clementin, chalc, riesling petroleum.
Fresh and refreshing. Would be great as a champagne sorbet mid dinner to clean the palatte.

Wow - Better than expected. Leather, tart cherry, wood, herbs. Good balance.
Aerate for 30-60, drink at 15-17.

2h decant, 17C, with grilled club steak. Great match with the red meat.

Dark wild berries, black pepper, Coke, cassis, graphite. Big n powerfull. Like dark rum of good quality at the end. Hard core tannins that really grips, and acidity./All in balance and a wow wine!

Last bottle. Should seek out for more!

With toast skagen. Did not read my previous notes on food match….bummer.
92+ with the food. But I expect it to rate higher alone or with a good match. NR this one

With grilled chicken stuffed with mozzarella n ruccola rolled in serrano. Garlic, onion, tomatoe oregano sauce.

Dark and red berries, root, earthy, fig. Full and dense.

14-16C, no Need to decant, will be a knotch better in a year maybe but excellent now!

Its a real wow summer wine. Try with more mediteranian dishes.

Best at 12C. Wish the summer was longer so I could during a few more!
