Very enjoyable. It still has some tanins left, but it holds the fruit and complements the wine. It was a PnP with an hour slow decant and we enjoyed it with a grilled rib eye. Thanks to DJ for his long, fulfilled promise.

Decanted 5 hours before dinner with J & J. A fantastic, grippy wine that has structure, fruit and still plenty of tannins to hold it for another 5-10 years. The meal was confit rack of lamb. Twelve hours dry brined, baked in olive oil for 2 hrs and then 2 days submerged in new olive oil. Recipe from "Slow Fires".

A decent cab, but I wouldn't go out of my way to buy another bottle. Pretty label and bottle and I'm a sucker for those.

Update: Second day, it had changed completely. Full bodied, luscious and exhilarating. I changed my rating from 90 to 95.

Loretta and I had this with grilled rib eye, potatoes and veggies on a hot June night. I expected the wine to enhance the meal, but it bogged it down. Thick, syrupy, too much oak. Barely made 90 in my book and definitely not interesting.

From magnum with Loraine and Bob in Almanore. Still excellent! Enjoyed by all. Had with bison stuffed bell pepper (today’s was more flavorful than yesterday’s) with Italian hot pepper jelly and a killer green salad with grilled artichokes. Oh!

Disappointing. The 2012 Pegau Chateauneuf that we had with it was the clear favorite. Not worth the $375 I paid along with 3 years of cellar space. Have one bottle left.

Excellent. I'm happy to see that we can locally produce a good bottle of affordable Grenache here in California. Chocolate flavors came out on the second day. I will seek out more wines from this producer.

With Loretta after a hard day's work installing a boiler in Castro Valley. Chez Panisse Covid take-out. One of our best meals; Ling cod, small potatoes, spinach and fennel. Cassata ice cream (OMG level). Memorable because of the food AND wine........and of course, my beautiful wife.

Excellent! We drank it ($38) with dinner next to a 2006 Sine Qua Non Raven No. 1 ($300) and the Stolpman had more character. I have another bottle or two in the cellar and I will treat them with more respect.

Until now, all the Pax wines I've had were excellent and with all the hype, I was looking forward to dinking this bottle, but I did not enjoy it. Watered down, somehow diluted. We had it with a vegetarian chana masala and I was wanting a robust wine, but was disappointed.

From magnum: Big wine with a hot, alcohol finish on the first day. Smoothed out totally on the second day to trend to a good, not very good claret. Purchased at auction for $200 on K&L Wines.

Purchased 2 magnums for $66 ea.; K& L auction. One of the best Pinot's Loretta and I have had. A bit jammy, so a couple of hours in the fridge made it lighter. With Thai take-out. Excellent!

This was a Nurse Cratchet wine. "Here I stand and I don't care if you like me or not.............", and I didn't.

Wonderful nose that held promise for the first sip and even the first sip was good, but as soon as it got some air, it turned dark and lost its appeal with disjointed flavors and an uncomfortable dryness on the palate when finished.

Not even a day in the fridge encouraged any positive development and I had so much hope for this wine as it's very difficult to find a good, moderately priced pinot noir. $60 at KL Wines and I was ready to stock up.

This has been in my cellar for just over 3 years. No special occasion, just the promise of a well-grilled ribeye and potatoes with Loretta and we really enjoyed the wine; PnP. A bit of heat. A wonderful chocolaty flavor.

As I understand it, these were stored by the producer and then re-issued a few years ago. I purchased two of these at a local wine importer. Both bottles were cooked. No life............flat.............spoiled vinegar..........sour grapes.

From magnum, a gift from a client. PnP, enjoyed it over two days with savory dinners. Bricking. Still enjoyable, but fading and just managed to catch it after it's peaked, before coming apart.

I opened this for Loretta's birthday and had gone to great expense to purchase this bottle at a K&L auction six months ago. It had a couple of wraps of cellophane around the closure, perhaps to prevent the cork from drying out. If so, it didn't do much good because the cork disintegrated into smithereens when I tried to pull it out and I had to decant and filter the remnants out. What a mess!
Surprising, the wine was delicious, but I suspect that it was past its prime given that I've heard that 10 years is perfect for this grower. Nevertheless, we both enjoyed the cornucopia of flavors as it went very well with filet mignon with a wine reduction sauce, potatoes and broccoli rabe.

We had this with a roasted chicken, boiled potatoes and green beans. It was my first Dom Perignon and we used the occasion of celebrating our new U.S. president as the excuse of opening one. It was excellent; apple, pear, chiseled and bright, great acidity, huge complexity and minerality. Five more in the cellar and will wait for more epic events before I open another. xxoo

PnP this evening. Tanins are resolved, a bit of heat on the finish, but just a wonderful wine; holding its own very well and have a magnum waiting in the cellar.

Only steamed artichokes and a nice salad for dinner because we worked late, but there was a lot to celebrate: election tomorrow and some personal achievements, so we dipped into the good stash.

More or less a PnP and the Saxum was delicious; lots of dark fruit; some tanins still present. The more I drink Saxums, the more I like they're style.
