Decanted for 3 hours. This a a massive, full body wine. Alcohol very present & not full integrated or balanced. Deep black & blue fruit. Tannins very present & prickly. Signature sweet, smoke & spicy fruit on the nose. Compared to the 2007 opened earlier today, this is no where close. Ingredients are there, just not seamless or integrated.

Decanted for 30-45. This was in a great place & still has plenty of life left in it. Beautiful floral sweet black fruit. Hint of smoke & asphalt. No noticeable oak other than vanilla. Good freshness despite weight of fruit. No off putting alcohol. This was excellent!

Purchased at the winery. No clue if we kept this too long, but I couldn’t drink it. Prior notes were spot on...hugely floral, incense, exotic spice, sweet, fruit. No tannin, nice acidity. But, this was such an odd wine to me....hated to pour it out. Thankfully it was only a 375.

Last bottle ordered direct from winery. Once again, the cork completely disintegrated. Wonder if the wax seal makes this happen. Same tasting experience as prior note.

Gift to my wife for Christmas 2019. Finally got around to popping it. Pleasant semi sweet bottle of bubbly. Not my style but seems well made. Shocked they put Champagne on the bottle.

Not really sure what to think. Purchased direct from winery. Cork completely disenegreted upon opening. Filtered into a decanter & began consuming. Smokey, spicy, meaty, herbal, red & black cherry profile. Something here is out of balance but it has very interesting components. I’m not a regular Tempranillo drinker so hard to place this in comparison. Getting better with time but has some heat.

The 2007 CdP vintage continues to perplex me as it hasn’t aged well. As a PNP, it was less than impressive & then I arifified it after my first glass. With that, the nose opened up exploding with black fruit & floral notes. Palate is all dense chewy black fruit, not stewed but thick. Just enough acid to have balance but definitely a heavy wine with a lasting finish. Bit of heat on the finish.

Decanted, poured & consumed. This wine is fully mature & not overly complex. Chocolate coated black cherry fruit with lavender & violet notes on the nose. Still has a dense chewy palate but soft & plush. Not overly complex, but enjoyable.

Purchased direct from winery. Caveat...I am a big fan of ale Cadeau. PNP. This reminded me of a ripe CA Pinot tending to the dark fruit profile with higher alcohol. Still good balance though, just heavier...reminds me of some Aubert Pinots from warm vintages. Vanilla, oak, smoke & spice with a touch of red raspberry, almost sweet candy like on the nose. Suspect this gets better in 3-5 years.

PNP, sealing half the bottle for night 2 as this wine seemed to be closed down. Almost no nose on it night 1. Slightly better but still muted on night 2. Palate of dark cherry, creamy vanilla & spice with a tannic backbone, but flavor profile is subtle. Flavors slightly more open for business night 2 but still muted. Thinking this needs time.

Purchased direct from winery. Decanted for 30 minutes & consumed over the next 90 minutes. Lighter in color, translucent. The nose is the star of the show..thrilling! The palate is light on it’s feet, but very savory...gains weight with time.

Purchased a case at Costco for $49/btl. 1st bottle, PNP with a glass then decanted. Way too you g but very enjoyable. My wife who prefers CA cabs really enjoyed it, which is saying something about its fruit profile but this is by no means a CA cab.

Flawed/rancid wine....tasted 1st bottle in 2010 & this wine had so much promise. This wine was horrible upon opening & unfortunately warranted being poured down the drain. Have 2 more left & hope this was just a bad bottle.

After trying my 2nd of 3 bottles, a flawed/rancid wine, I decided to open my last bottle. In my rush, I grabbed one of my 2007 Les Hautes Brusquieres, which was also horrible. I poured both bottles down the drain, something I have only done a few times before. So disappointing. Went back to the cellar & grabbed my last of 3 VV bottles. Not flawed or rancid, but not great either. Dusty red cherry profile with wood that stands out & is not integrated. Not very good. I’m finding that I really don’t like hot CdP vintages & that these 2007s don’t age well.

Purchased direct from winery. Decanted & poured back into bottle after 15 minutes. Heat on the nose reflecting alcohol from the warmer vintage. Palate of sweet fruit with fully resolved & smooth tannins. The oak that normally is off putting with this wine in its youth is fully integrated. Good balance despite a more brooding profile. Nice 2nd label by QC!

PNP. 1st of 3, purchased direct. Classic Cayuse wine....sweet black cherry, smoke, bloody, animalistic palate. Hints of stem/green notes on the nose & palate, which was slightly off putting. Lacking enough acidity to maintain freshness so palate is a bit heavy handed. Needs food as a result. Don’t think this will get better with more age.

Perplexing wine...especially after having the ‘14 last night. Purchased direct from winery & cellared since 1st if 3. This had a similar profile as the ‘14, light in it’s feet, but slightly out of balance. More typical Cayuse funk on the nose, which dissipated with decant. Viognier noticeable, salinity, earth & more animalistic than the ‘14 to me.

This is a stellar wine & has aged beautifully. Mature but not over the hill. Similar characteristics as prior tasting note. Well balanced & elegant profile with silky tannins. Wonderful wine & sad it’s my last bottle. Have 1 more ‘06 so I just bought some ‘16 at local store to restock. Will be looking for more.

Purchased direct from winery, cellared since. This wine upon opening was nothing what I’m accustomed to in Cayuse Syrah. Lighter in style, translucent in color. No signature Cayuse funk on the nose. It took 2 hours decanted to hit its stride & find it’s sweet spot. The wine added layers & complexity as it evolved in the glass. Higher % of Viognier was evident. Hard for me to say how much shelf life this bottle will have given it’s lighter , more elegant style given the lack of tannic backbone.

After having an off (green & vegetal) 1st bottle, I was worried about my remaining 2. All 3 purchased direct from winery & kept in same conditions since arrival. Bottle 2 & 3 were fantastic. Definitely mature with great spice & secondary flavors, but fruit was well balanced, bright & in a good place.

Disappointing, but not the wine’s fault....just waited too long to drink this. Great flavors, but muted & somewhat flat. One more bottle, which I’ll open tonight for a back-to-back tasting to see if there is bottle variation but I suspect it is just past it’s prime.

Purchased 3 bottles direct from winery upon release. Had bottles on back to back days as 1st bottle was surprisingly light. 2nd bottle day later was also light in color & body but had a little more weight & fruit. Bright red fruit on the palate, raspberry & strawberry. Mouth watering salinity & acidic profile. Not much in the way of secondary characteristics...some spice, but not much else.

Fantastic wine! Decanted first an hour. Still very youthful with big fruit. Tannins are silky smooth. Excellent weight & balance with good mid palate & long finish. Not much in the form of secondary characteristics yet as fruit dominates. More new world than some Dominus vintages. Can’t wait to see what this turns into in another 5-10 years!

PNP to see where this wine is at 5. Massive, black, tannic wine. Black fruit with hints of stone. Nose was somewhat muted. Palate was massive & thick. Has the stuffing & fruit to last another 10-15. Expect it will improve when everything softens.

Good, but not great, wine. It was monolithic & somewhat simple, lacking layers & complexity. PNP from magnum so I'm thinking it was opened too young with not enough time to breath to open up. I suspect with more age & decant time, it would be much better.

PNP....15 years old & in a good spot, but the fruit still has life. Great acidity & freshness to compliment the big deep red fruit profile. Forest floor, cola, spice & plenty of red currant, strawberry & raspberry fruit. Another great reason to love Cristom.

PNP....great right from the start. Very Burgundian in style. Spicy red (strawberry) fruit with classic Cayuse herbal notes. Tannins were a little prickly, but there is nice freshness that offsets this. Medium body with long finish. Great wine in an off vintage. Drinking very well now but can last up to 5 more.

Needed an hour before it got better. Very light and thin at first. Built some weight but was missing the complexity, layers, fruit & nose these wines typically have. I’ve opened my last 07s & now 08s & realizing these wines are not 10+ year wines. 5-7 is the zone.
