Almost black. Intense black currant right off the bat. A slight scent of suede and medicine cabinet. With air, it becomes more subtle, almost elegant. Hints of spice, tea leaves, mocha, and tobacco. Indications of high alcohol. The first taste has a caramel touch. Tight. Nicely integrated high alcohol. Rough tannins. Dark fruits, tobacco, cedar, and coffee. A good wine.

Velvety. Nose with apricot peel, tropical fruit, and hints of acetone. Viscous. Bright and dominant taste of apricot on the palate. Vibrant acid balances the fruit nicely. The wine has high concentration and extreme length.

Right after opening, somewhat closed with hints of lead and licorice. After three hours in a decanter, it opens up. Nose with blue fruit, some leather, and pencil shavings. On the palate, anonymous with some blackcurrant, fruit, and hints of leather. I experienced the wine as thin with a relatively flat structure and a lack of power. I have little faith that this will get much better with time.

What a surprise. 100% Cab Franc from Napa. Nose with cedar, tobacco, tar, plum and dark fruit. There are also hints of licorice. Powerful and rich palate with spice, black cherries, some tobacco, and leather. Initially som lavender notes as well. Tight structure, nicely balanced. Drinks very well now.

Cederic Bouchard tasting with add-ons. (LystPå resturant Bodø): Sweet wheat dough (also known as brioche or autolysis). Bright red berries with fresh acidity. Develops leather and hung meat, as well as sweet tobacco. Like drinking a good Burgundian Pinot with bubbles.

Uncles Fine Wine Spring BYO (Home): Very concentrated nose with intense fruit. High viscosity and extreme concentration in the mouth. Unbelievable length. Beautifully balanced. This is liquid sweets. Turns blue cheese into whipped cream in the mouth.

Uncles Fine Wine Spring BYO (Home): Welcoming nose with raspberries, crushed dried strawberries, sweet cherry and umami. Mouth with lovely pinotspice. Elegant and slim fruit. Cherries and raspberries. Fresh and welcoming. Served slightly chilled, one could easily drink a bottle in 27 minutes.

Uncles Fine Wine Spring BYO (Home): The nose has fresh, moist tobacco, blue fruit, something sweet, sour and floral. It is complex. Tight structure, while delicious fruit flavors penetrates the curtain of tannins. Complex and lovely wine that was perceived as surprisingly accessible now.

Uncles Fine Wine Spring BYO (Home): Confusing nose with hints of butter, lemon water, paper and after some time in the glass, some sweet fruit. On the palate there is some spice, hints of gasoline and little to none fruit. Food-friendly white wine made from a new and, to me, unknown grape.

Uncles Fine Wine Spring BYO (Home): Faint tropical tones on the nose. Sublime and elegant without giving much. On the palate, it is surprisingly fruity, with sweet fruit, while it quite clearly announces both its grape variety and its origin — still some minerals but with less pronounced oak than the previous wine.

Uncles Fine Wine Spring BYO (Home): Great bottle. Minty and youthful. Light red fruit. Reminds me of a cool Bordeaux. Fresh from the get go, but with air added I find hints of raisins and prunes. Delicious wine, which is at the top of its drinking window now.

Uncles Fine Wine Spring BYO (Home): Butter tones in the nose. Tobacco, almost salt. Leather and tar. Licorice. On the palate it is agricultural. I find fine spices, licorice and tar. Classical. Drinks nicely now. Silky soft structure. Elegant.

Uncles Fine Wine Spring BYO (Home): Booom! Awesome!. The best Champagne I ever tasted! Round and sweet nose with yellow fruit and hints of malt. After a while dark chocolate and licorice. On the palate, it has a dazzling acidity and length. It is refreshing with green apples. I find malt, salt, shells, and sea. Every time I smell and taste, new things are discovered. Very complex and concentrated. In a perfect place right now. Pure comfort.

Uncles Fine Wine Spring BYO (Home): Floral nose with some spices, cardboard and paper. A little soapy in the mouth. Full-bodied mousse but the fruit, which is mostly citrus, is perceived as slightly watery and thin. Young and fresh, will last.

Uncles Fine Wine Spring BYO (Home): Perfumed nose. Spices and yellow fruit. Violent effervescence initially, but it calms and becomes creamy with a soft and lingering mouthfeel. Complex with yellow apple, hints of citrus. Umami. Very long with whipped cream. Appears young and will last for quite a few years.

Friday night blind BYO (Anders Condoe): Lightly reductive nose to begin with. Eventually hints of meat, soda and salt minerals. Powerful fizz and sky-high acid that are not completely balanced. Lemon. Autolysis tones appears towards the end.
