Opaque. Fruit and spices on the nose. More of the same on the palate. Pure. Luxurious. Perhaps cellar for another 5+ years for added complexity? Or don’t. True to its origin today. Amazing juice now. And for years to come.

2017 Saxum Paderewski Vineyard Paso Robles Willow Creek District Red Blend (view label images)
No formal notes. A bit closed out of the gate, but opened up with time in the glass. Paired well with our pasta. Maybe hold off a few years, but nice enough now.

Opaque. Dark fruits and baking spices on the nose. Add a saline note on the palate. Plenty of tannin and good acidity. Modern. Can be enjoyed now or cellared for years. Protos is a great bodega and their wines some of the best quality per price you can get. The 27 is a stunner too.

After reading the prev notes, I decided to pop my last bottle tonight. Gave it a 2 hrs decant, poured it back into the bottle and put it in the fridge for some 30 min. Ink color (in the relative darkness I’m in it seemed pitch black). Napa on the nose. Melts on your tounge revealing layer upon layer of fruits, spices, cocoa and more. Never heavy, always present. A gem.

Deepish ruby. Red fruit on the nose. Add stems and sweets on the palate. This reminds me of the 14 Antica Terra Coriolis. Primary yet accessible. Confident.

Deep ruby. Black fruits, stems and oak aromas on the nose. Medium acidity, pure fruit and and sweet, powdery tannins on the palate. Had at Father’s day so from memory. I much enjoyed this.

Opaque. Asphalt, aniseed and cured meat on the nose. Dark fruits and iodine on the palate. This has evolved beautifully since my last visit and is a real pleasure to drink now. Not my first SQN, but my first glimpse of Manfred’s greatness. Wonderful.

Dark ruby. PnP after half an hour in the fridge. Earth, cherry and spices on the nose. Add plum on the palate. Medium body. Terroir and typicity. In that order. I wouldn’t hesitate to serve this in a flight of cabernet wines true to their origin. Yum!

2 hrs decant followed followed by 15-20 min in the fridge. Opaque. Plum and spices on the nose, which is amplified on the palate. Like thunder, before lightning. An exceptional wine. And there’s more to come should your be a more patient nature.

Dark ruby. Funk on the nose. Morello cherries on the palate. A fine expression of the pinot like qualities of nerello mascalese. My first experience with the later grape. Will no doubt come back for more. You may want to let lay.

Inky. Sweet spices and dark fruits on the nose. More of the same on the palate. Not the most complex wine, but pure and smooth. The 2015s are a nice step up from the prev two vintages. Serve at cellar temp.
White - Sparkling
Pale yellow. Sea breeze on the nose. Citrus fruits and minerals on the palate. Crisp and refreshing. Young, but enjoyable now.

Opaque. Baking spices on the nose. Add sweet cherries and hints of Asian spices on the palate. The nose was a little muted, but the palate was singing. At peak.

Opaque. Nose a chameleon changing back an forth from stewed to fresh berries. Far between micelles filled with spices and plum on the palate. Refined and absolute. I needed it to knock me of my feet. It didn’t. But I feel lucky nontheless.

Opaque. Oak and dark fruits on the evasive nose. Not much else on the lifeless palate. What has always set this wine apart is its extreme silkiness. However, in the dumb phase it now seems to be in, that feel has turned almost fabric-like. Revisit in 2020+.

Opaque. Hints of olives, cured meat and violets on the shy(ish) nose nose which resonates the palate. It’s quite enjoyable now, but I suggest to let lay for 5 more yrs. We popped a bottle of 07 PS syrah a few months ago and it blew me away. I think this will as well in 2020+.

To finish the quote on the label “ ... a soothing, calming influence on the mind, ... which provides relaxation from physical fatigue.” What you need to pair your bento with on Friday. Love it.

Opaque. Sweet Napa nose. Dark cherries and sweet spices on the palate. Salty flavors develops after hours in the decanter. So extracted it approaches synthetic. Jug wine feel to it. (Think chips, not barrels.) My first Caymus. Could well be my last.
