This wine continues to amaze but I must resist drinking any more bottles for a while, as the wine is still quite youthful. Dense dark fruit with waves of cassis, raspberry, black cherry, cedar, and spice. Tannins still prominent but well integrated. Very long finish, 30+ seconds. We drank this with grilled bacon-wrapped antelope filets with port wine reduction sauce - delicious and decadent pairing!

Didn't have much time to decant but still drank beautifully with notes of cassis, saddle leather, mocha, and little spice all interwoven in a harmonious balance with tightly knit tannins. Long satisfying finish. Saxum never disappoints!

A nice Chablis we tried at a restaurant recently. Crisp white fruit with notes of apple, lemon, minerals. Satisfying finish. Should improve with aging.

6/7/20, 1:38 PM - Yea, the restaurant charged $190 for it! I bought a case of this wine today and it was only $75/bottle. Big markup but I try to support good restaurants - selling wine and drinks is how they stay in business.

This wine is still young but it was excellent tonight with baked stuffed shrimp. Crisp white apple, lemon peel, wisps of honeysuckle. Overall, excellent balance with good minerality and acidity providing a nice backbone for the fruit. I see that 88% bottles are still in cellar. I think patience will reward us even though it's drinking very well right now.
