Coravin tasting of 2011.
Not impressed with the nose ..a bit thin? Nice classic color...ruby..and looks like it’s it’s in solid drinking window. the initial taste is pleasant and we’ll balanced. More tannic than I expected. Nice deep flavors, with moderate length finish on the tongue. Velvety finish gives away the merlot heavy right bank style. As a regular cab sav drinker it’s a welcome change.

I’m rating below 90 but the more I think about pairing my with food, this may be higher. Next tasting will pair with food and revise review.

11/17/19, 12:15 PM - Coravin tasting separate bottle of 2011 Paired with a creamy Berginost cheese. Initial sip and pleasantly surprised. Nice balance. Still a bit tannic. Going to let breathe and warm up to temperature too before continuing this review. 45 minutes later....much better! Tannins more balanced and get more fruit , cherry for sure. It keep my rating right around 89-90 as it’s just not distinct enough to warrant more.
