Beautifully soft, even slightly petillant, sweet but not sweet, in the way a dry wine isn’t actually dry. Seductive. Intriguing. Like the first time you meet an emo boy.

Closest I can compare to is a sweet oloroso. This had maybe a touch of orange to it, quite light, rounded, slightly woody. Stood up well to the profiteroles.
