ok...opened first bottle and agreed with many other tasting notes; dried out, dusty, kinda like an old amarone that had lost its hold on life...
so i corked the bottle after only pouring a half a glass and was determined to return the entire case.
three days go by and i need a red wine to cook with. i thought this wine wouldn't be bad to cook with,
but to be sure i poured a splash in a glass and drank it...and WOW. the difference was profound. this wine had taken on some body,
a light richness, some sweet tannins, and dark stone fruit, with black cherry notes, and it was sooooo smooth!!!
I couldn't, and didn't stop sharing this story with friends until the bottle was finished. So give this one a chance. It's fairly cheap,
and worth either cellaring, or decanting for a...day? 2 days? have fun with it regardless

The balance is still near-perfect, the richess of the wine really comes through in the mid-palate, but the minerality is beginning to fade into the background. We feel that this wine is at its peak now. But if you like rich, creamy chablis, with minerality and acid as a subtle background feature instead of upfront, give this one a few more years (2-4 years) and you will be rewarded. Otherwise enjoy now!

2 years since purchasing this NV. It has gained considerable weight, become rich, almost creamy. with great structure and a fantastic finish. a NV worthy of cellaring.

fleshy, full bodied, and full of deliciousness. Having had a bottle every 2 or so years since release I would say this wine is at its peak. rich, doughy, with good golden fruit notes. the acidity is there to keep your interest. the finish is long and seductive. if you like perfectly aged champagne drink this now!

rich, ripe, bacon fat, lush...big red fruits when first opened but the wine comes around after an hour or so. settles down, becomes a bit more serious, rounds itself out. over all a bit of a easy and very likeable wine at this stage. may develop more details with time.

favorite NV rose? probably a tie with Pierre Peters Rose. Vilmart Rose is incredibly fine, layered, complex, amazing.

not sure how to judge this bottle. totally hyper active bubbles with massive fresh ripe berry fruits in your face.
there is nothing shy about this wine. after 6 hours it had not settled down. if you like this style it is amazing.
for me, i prefer a more well rounded and balanced champagne. as for the price it is kind of silly

nice. on the down slope. drink now if you have any left. at it's prime i enjoyed very much. i would say that overall his whites see too much oak and do not integrate well. or at least not harmoniously. but this is from someone who loves the juice.

price aside. it is a really great rose. it also needs TIME. this bottle was from the most recent release. consumed over 48 hours. WAY more open he second day. lusher, riper, fuller. don't be put off with the first sip. seal it back up and try it again the next day. worth the wait!

never a fan of Dom since the 1982 vintage. That being said i have had some pretty good bottles over the years but nothing i would say WOW over.

the 2002 changes all this. WOW! and WOW at its very young age. don't miss this bottling!!!

when i first open a bottle many months ago i was somewhat disappointed. sure, it was a nice rose but at $90 kind of expensive and the wine a bit disjointed. i am happy to say that this wine is maturing nicely, revealing much more complexity, depth. it is coming together and should be even better in another year or so.

wow! this wine will need some time measured in decades. over 3 days i tasted this one (half a glass a day, champagne stoppr..etc). day 3 and the wine hardly had opened up. it hinted at what will come. and it will be stellar. if you have a bunch of bottles, try one! Otherwise have patients.

big and lucious. saved 1/2 the bottle the next day, no gassing. 24 hours later this wine really balanced out. was quiet pleased but will save the next bottle for a few years. should be good for 5-10 years, peaking in about 5-6

a huge wine that packs a punch. while the 96 is super young and gives up almost nothing, the 95 roars out of the bottle and continues to unveil more over the short 45 minutes it took to finish the bottle.

surprised that salon released a 97, i now know why. excellent bubbles, opened up rapidly. tropical aromas, and ripe fruit not usual for so young of a Salon. while really really good, this will be a rapidly maturing wine for Salon. i'd say it will peak in about 5-7 years and drink well for no more than 10 before it begins to lose its shine.

Wally's Champagne Event at Le Merigot in Santa Monica: This has to be the most overpriced champagne ever. It is fairly terrible and was the least favorite champagne at the event. a thin, boring, unimaginative wine. yes the bottles IS bling and it IS in a rap video but for $290 a bottle I could buy Salon, vintage Krug, Dom Ruinart or a half dozen bottles of Billecart Salmon Brut.

This is the Champagne for people who know nothing about champagne and want to share it with other people who know nothing about champagne (and want to pretend they are really cool).

Wally's Champagne Tasting at Le Merigot: was not expecting much considering that krug, dom, cristal, dom ruinart, etc was poured at this event but this was the champagne of the night. elegant, tight bubbles, great nose. it had been opened for about 4 hours.

holding up well. more elegant, less edge than two years ago. after the bottle was open for about 4 hours the wine began to break up. there is still a ton of fruit and structure here. could last another 5-8 years.
