Ladies and gentlemen, may I present to you: Bellevue Mondotte 2005 or what you should not do with your precious plot in the world‘s best wine region. Too much extraction, no precision and especially harsh, drying tannins. 4 hours in the decanter and 3 hours in the glass helped a bit but could not turn it around. In my opinion, this is nothing you can solve by further cellaring. I don’t have a big problem with the extraction (I have to say that, my beloved Napa wines might read this note) but I fear that these tannins will never be right. I advise to sell all the bottles you have (you‘ll get a great price and an even better reward).

    2/25/19, 2:43 PM - This is very high quality rich grapes from great vines that is why is such a great concentration. Not every young wine drinkability can be fixed with decanting. You opened it way too early. You've got to let it ride for 20 more years in the cellar to allow all those high quality rich tannins integrate properly at its own pace, then you will have majestic wine. Decanting is not equal cellaring/maturation. If you have another bottle mark my word and cellar it
