Drank at a Bordeaux wine lunch with 5 other Bordeaux wines (1989 Chateau Beychevelle, 1993 Chateau de Valandraud, 2000 Chateau Lynch-Bages and Giscours, 2003 Grand Vin de Leoville du Marquis de Las Cases). The 1993 Chateau de Valandraud and the 2000 Giscours were the two outstanding wines for me.
My Chateau la Rose Figeac was decanted around 10 pm the night before the tasting and decanter recorked. The next morning the wine was filtered back into the bottle, recorked, and kept at 63F until lunch. The overnight decanting reduced the astringency of this relatively young wine (Coravined before decanting confirmed the somewhat harsh tannins on the finish). Although the nose was somewhat subdued compared to the Chateau de Valandraud, the palate was lean and elegant. This wine can easily be cellared for another several years.

Beautiful light rose color and peach nose. First taste via Coravin seemed a bit on the sweet side, but a relatively long mineral finish. Second pour the following day was without the sweetish-palate and beautifully refreshing. Drink now. two more bottles to taste this summer.

Very enjoyable wine with a strong cherry palate and a silky smooth finish. Paired with duck breast. It was certainly ready to drink.

Probably the most enjoyable Bordeaux I've tasted. Near perfectly balanced with a fine tannin structure and a good integration of dark fruit and acidity. I decanted the wine 3 hours before pairing it with a prime rib eye steak. The decant was essential to get the most from the cedar box nose. In fact, the little wine I had left on the following day was even more expressive. The palate was full bodied but elegant, the finish lingering for many seconds. Unfortunately, the wine completely lost its balance on the second day, even though I had it under partial vacuum and refrigerated. Oh well, it was great when it counted.

Coravin'ed wine and was very pleased with my first glass from this bottle. The nose was subtle but with hints of leather and cedar. This medium bodied wine was complex and nicely balanced between fine tannins and acidity. Finish was reasonably long. This is my last bottle, but I will be coravin-ing it over the next few days to see how it develops.

A lovely wine, ready to drink right now. Although tight on the nose, never really opening up even after a 3-hour lunch, the palate overflowed with dark fruit - approaching jammy in texture and taste. It had a California cab palate to me. Beautifully integrated with silky tannins, moderate acidity, and lovely fruit. Enjoy!

Deep ink purple, little signs of aging on the rim, refined dark fruit nose, silky tannins and long balanced finish. Can one ask for more? It may be at its peak right now. One bottle left that I can try next year.

Decanted 2.5 hours before an extended three-hour lunch and Gigondas tasting. The decanting definitely reduced the initial pepper and tannin finish to a well balanced wine of silky tannins and moderate acidity and dark fruit. Very enjoyable but still has a few years before it reaches its peak.

A great full bodied white wine. Smooth and creamy on the palate with an expressive nose. For me, matching a CdP Blanc. Paired well with brined grilled pork chop.

Beautiful after decanting for 2-3 hours. Balanced tannin and acidity with a relatively long finish. Drinking great now, but we'll see how my last bottle matures over the next year or two.

A beautiful Burgundian styled wine, with a subtle floral nose and a well balanced and long finish of tart cherry. Truly enjoyable. The wine did open up during our three-hour lunch so decanting might be a good idea or letting it mature a couple years longer. Spectator's drinking window 2018-2025 while Parker's ends at 2022.

Initially subdued upon opening. However, after decanting it opened up nicely with a subtle aromatic nose. The palate was balanced with fine silky tannin.

Our wine lunch consisted of three wines from Spain, two Riojas and one Penedès. The CUNE was not decanted and started off slow with a very subtle nose. However, over time the nose became somewhat more pronounced and the palate developed quite nicely with dark fruit and hints of leather. I don't expect it will improve beyond its present state. For my money, the 2014 La miLana from Albet i Noya from Penedès had the most character, especially immediately after decanting. The 2005 Club Lealtanza Reserva was also good, but probably my least favorite of the three; however, they all were quite good when paired wisth food.

Wine still has time to reach its peak. I drank it using a Coravin over a 3-day period. On day 1, the tannins on the finish were quite sharp and astrigent; the wine was quite closed. On day 2, the wine was better integrated and was opening up. On day 3, the wine was well balanced and a pleasure to drink.

Good tasting Chianti. Paired with home-made pizza. Lost the tannin over a couple days of drinking with a Coravin. This wine should improve with more age. Drink another bottle in a year.

This wine, the third and final bottle that I have enjoyed, continues to excel. A beautiful, but subtle cherry nose, with a well balance and long finish, complimented by the Beaux Freres typical acidity.

This is an interesting desert wine, but not to my tasting. It is very botanical on the nose and palate, reminding me of root beer-flavored cough medicine when I was a kit. I tried pairing it with blue cheese (Gorgonzola), but it didn't help. I am still trying to find some food item that pairs well with it. Any ideas?

This is a superb dessert wine. Beautiful light bronze color, honey-fruit on the nose, and palate of honey and pear. Drinking great now but will be interesting to see how it ages, given the reputation of this wine.

I rated this wine highly in the past, but this bottle just didn't have the nose and palate expression that I noted in the first bottle. It was fine, but nothing to rave about. Maybe it was bottle variation or the fact that it was not stored in my wine cellar. Anyway, one more bottle to try.

Subtle nose, but wonderful pallet. This wine blows out of the water a 2017 Maison Louis Latour Bourgogne that I recently tasted. The Bourgogne was one-dimensional with little character, while the 2016 Seven Springs was complex with a lingering finish. Willamette wins again.

I found this Burgundy quite simple, one-dimensional, and too lean for my tastes. It was like drinking flavored water - maybe an exaggeration, but that was my sense of it. In contrast, my wife thoroughly enjoyed it, as I am sure many others would. Wine taste is certainly individualistic.

Although fruit forward wines are not my cup of tea, this amarone-styled red blend is a great wine. The nose is bold with fruit and the amarone vinification is apparent. The initial palate is full bodied and concentrated with lovely dark fruit - smooth and silky. On the relatively short finish, there is a merging of acidity, alcohol, and fruit. It is drinking fine now.

I tasted this Pinot Noir two years ago and thought it needed more time. I am pleased that I waited to drink my last bottle. Upon uncorking, a Burgundian "funk" was evident, which I like, but was negligible after decanting. The high point of the wine was a long, complex, finish. this wine is drinking beautifully now.

Excellent wine. Upon opening, subtle leather and barnyard nose, which dissipated quickly to aromatic dark fruit aromas. Palate started with quite a bit of acidity, but over 30 minutes or so became nicely integrated. Beautiful silky finish. Drinking nice now, but will improve in the next few years.

A very nice Chianti Classico, but on the less complex side. Beautiful pairing with cannelloni and red sauce at Gino's. The nose was somewhat subdued with a hint of fruit and musty scents. The palate was clean with a cherry backbone. Short on the finish. All in all, it was a pleasant, easy drinking Chianti.

Very good Napa cab, drinking beautifully now, but I don't expect it to get any better. Parker cites a drinking window to 2039, which I find difficult to believe. I have one bottle left, which I will hold onto for another year before drinking. Expressive dark fruit nose, which opened up with time. Full-bodied and integrated palate with nice finish. Not much obvious structure. The components are well blended at this time.

I found little to enjoy in this wine. It's astringency impairs the finish, while the nose in simple black fruit. It did a bit better when paired with a sous vide'd filet mignon, but still unimpressive to me. Other bottles of this wine drunk in the prior year fared much better with 90 and 91 point reviews.
