At pheromones for lunch

Big nose of red fruits, vanilla, cinnamon, and cedar. On the palette it’s full bodied, intense, with noticeable but fine tannins. Good balance between fruit and acidity, with prominent notes of molasses that come with a port-wine like finish. A pretty big and complex wine that paired really well with steak.

Nice wine!

Decanted half a bottle for 1 hour before serving. Bottle breathed for 3.5 hours before serving the other half.

Initially the wine was quite closed. Some red fruits on the nose. On the palette it is fruity with good acidity.

3.5 hours later the wine opened up with a fairly intense bouquet of rose petals, meat stock, mushrooms, and cherries. The palette is round, vibrant, silky, and fairly intense. There is a good balance between savory and fruity elements. The wine continues to develop in the glass with air.

Surprisingly accessible for a Corton rogue. Nice wine!

PS First time seeing the AS-Elite cork - pretty interesting!

Deep golden hue. Enticing bouquet of apricot, white flowers, and honey. On the palette it’s round, oily, savory, with good intensity filling the palette. It has vibrant acidity, complemented by a decent amount of fruits. Slight bitterness on the finish. A fairly complex wine.

Finally an aged white burg without any premox issues.

Paired with spaghetti bolognese

Decanted for 7.5 hours before serving

Nose quite closed. Some red fruits and cedar on the nose. The wine is rich, full bodied, tannic, and acidic. On the palette you get red fruits, plums, some cedar, rich mouth feel. Still a very powerful wine that needs time.

More a food wine at this stage.

Well structured and balanced wine. Nose of black fruits, warm bread, with some cedar notes emerging towards the 3rd hour mark. On the palette it’s balanced, structured, with some black fruits. A little grippy towards the end.

The wine feels like a serious, well mannered student - Everything is decent, but the lack of any distinctive personality makes it a little bit boring.

At Tiger Yakiniku

Vacuum sealed slow ox overnight before serving

Last meal out before another round of lockdown.

Nose of metal, blood, plums, and black fruits. On the palette it is very smooth, with great balance between fruity and savory elements. Fully resolved and fine tannins. Very enjoyable wine.

Boxing Day Dinner with family

Old snow garden for Shanghainese food

Double decanted for 3 hours before serving.

Nose of black berries, raspberries, oak. Palette is tannic, with notes of oak, blackcurrant, black berries, leather, liquorice and cigar box.

Good wine but I think the wine still has a long way to go. Will hold off drinking these for a while.

Sine Qua Non The Duel Grenache 08

Bottle opened at 1030am, poured a glass and recorked, and then decanted and served at 7pm. Drank over 4.5 hours

Paired with tomahawk steak.

What a wine!

Nose - cherry, liquorice, slightly minty, floral. The palette is quite fruit forward and tasted like a gourmet version of strawberry fruit roll-ups, with cherry, liquorice (like the ricola candy), and minty notes. The wine is balanced, powerful but very elegant. The finish is very long - it lingers in the mouth and doesn’t seem to go away.

Paired heavenly with the tomahawk steak - the steak tasted beefier and the fat turned into a creamy and buttery taste in the mouth. The wine gained a meaty flavour and the red fruits accentuated as well. This combination of flavours lingered for a long time every time you put a piece of meat into your mouth and then sipped some wine - what an ethereal experience!

This wine can take in lots of air. It is more open and developed towards the fourth-hour mark, with grilled meat notes emerging. The wine has already taken in 13 hours of air by then and still went strong.

I am sold - kudos to Mr Krankl!

Nose of plum, liquorice, and leather. Palette has some plums, cherries, leather, slightly earthy, slightly acidic. The wine tasted slightly disjoint at first.

2 hours into drinking the wine opened up - the bouquet intensified and the palette became integrated, smooth, silky with additional notes of warm bread.

Towards the 3 hour mark the wine got slightly grippy.

Nose of black fruits, oak, cinnamon, vanilla, and violets - very fruit forward. There is a tingling sensation on the nose from the alcohol. On the palate - ripe fruits, vanilla, woodsy, and buttery. The wine is bold, balanced with fine tannins.

Three hours into drinking the wine really opened up with an explosive nose of blackcurrant and ripe black fruits - like a fruit bomb. Some coffee notes emerged. The palate remained fruity, balanced with noticeable oak and tannins.

Overall a pretty enjoyable napa cab and paired quite well with braised beef brisket.

2nd to 3rd hour into drinking the wine opened up. Notes of meat stock emerged, red fruits aromas accentuated and some mushroom notes showed up on the nose as well. The wine gained a little bit of weight on the palette and acidity dialed up slightly.

4th hour into drinking the bouquet intensified a little. The wine maintained its composure on the palette - though acidity has dialed up a little further but still pleasant.

Pretty enjoyable wine as the wine continues to develop and evolve throughout the night. I generally like the wines made by this producer.

Slow ox 4 hours before serving

First hour into drinking the wine was very fragrant and open for business - with red fruits, tomato vines and leaves, grilled meats, and leather on the nose. The palette was very silky and tasted fresh with nice acidity. Fruit and savory elements were well balanced, with notes of cherries, raspberry and leather.

3rd hour into drinking, mint, eucalyptus, and licorices notes emerged. The palette gained weight and became more acidic, slightly tannic and grippy.

Overall a very enjoyable right bank!

Opaque purple on appearance. Dark fruits, grilled meat, cinnamon, slightly oaky on the nose with a slightly tingly alcoholic sensation. The palate is fairly smooth - its fruity with good acidity, slightly oaky with notes of vanilla and cinnamon. The wine does not taste old. It’s quite bold, fairly complex, and pairs really well with the steak.

I like this wine with food. By itself it’s a little too bold and heavy for me.

Breathed in the bottle for 6.5 hours

Upon opening, nose of cherry, cranberry, leather, tar, and brett. Palette is quite smooth, with notes of prune juice, leather, tobacco, and tar.

2 hours into drinking the barnyard and leather nose toned down a bit. Red fruits emerged further. Palette is still smooth, cranberry and cherry notes became more prominent. Leather and tar toned down.

6 hours into drinking the wine became very fragrant - Red fruits, grilled meats, licorice. Barnyard and brett faded away, with meat stock notes emerging. Palette is smooth and the fruit and savoury elements are well balanced. Medium plus acidity - the wine tastes fresh with a 20 second finish.

This wine has lots to offer if you have the patience for it. Amazing value for money!

Nose of slightly ripe berries and eucalyptus, italian mixed herbs, minty with a hint of grilled meats. On the palette the wine is very smooth, almost burgundy-like - Tannins fully resolved, great balance between fruit and acid. Initially the wine has a nice spicy and peppery finish. 1 hour into drinking the wine harmonised further and became more elegant. Drinking very well now - delicious!

Initially high acidity, medium plus tannins, decent red fruit. Nose initially muted. 2 hours-in in the decanter: palate becomes more rounded; acidity, tannins and fruit reaching closer to an equilibrium; Decent red fruits; hint of cigar box. This wine can age for a few more years.

At home with wife.

Riedel sommelier burgundy superleggero.

Nose: cherry, cranberry. 30 mins into opening notes of bubblegum showed up. Notes of star anise showed up from gentle swirling.

Palette: tannins fully resolved. Medium acidity, some red fruit, quite elegant.

Good effort. Good bargain for the price paid.

Good stuff - amazing value. Needs a long slow-ox for the wine to get into good drinking condition

Initially meat stock, stewed plum nose. 45 minutes later prominent mushroom, eucalyptus and herbal notes came out. Palate very acidic, tannins still present, got softer with time. The wine can probably benefit with air in the decanter. Overall the palette isn’t well integrated and it doesn’t seem like it will be well balanced and integrated with time.

Decanted in a carafe for 20 minutes before serving - chez moi with wife

Nose- very expressive and opulent. White flower, waxy, honey. Nice good bouquet.

Palate - well structured - very balanced. 30+ second finish. Smooth, integrated, with a hint of bitter finish. Tastes fatty - paired very nicely with scallop miso chowder and foie gras. Full bodied white that drinks like a red Wine. Excellent!

Home - paired with grilled steak. Decanted for 2 hours before serving.

Nose - pretty muted even after 2 hours of decanting. Some cool fruit. Classic brunello nose.

Palate - tannic, alcoholic, acidic, overall not integrated. Got even more acidic and grippy towards the 3 hour mark. Wine died in the glass later on. Not impressed.

Nose: gamy, bloody and spice-like nose. Very open. 30 minutes into the glass - licorices and medicinal, with spice. 50 minutes into the glass notes of sugarcane came out, and the spices and bloodiness faded away.

Palette: gamy, spicy, plummy, with a spice-like finish that lasts about 30 seconds. Later on the palette turned more sweet and medicinal, and the spices died down. 60 minutes into the glass the palette got sweeter.

In general the wine goes on and on. Very different in style compared to the gervey chambertin that was tasted along side . Very enjoyable wine!

Nose: cool fruit, dark cherries. Later on turned even colder fruits.
Palette: tannic and grippy at first, with an acidic finish. Berries, blue berry, 10 second finish. 45 minutes into the class the palette begins to integrate more. Would decant for 45 minutes next time I try this.

Nose of marmalade, honey, dried apricot. Medium bodied. Sweet with decent balance. Fresh. Light yellow colour, pretty smooth on the palate. Nice wine.
