Fantastic golden color from the pour. Definitely showing its age in good way. Notes of butterscotch, flint, and a touch of matchstick. Really drank like a pricier area like batard, can’t remember enough.
White - Sparkling

Holy cow this was in a good spot. A bit more petrol and oxidative notes then the one I drank in the summer, but the raw honey came through again.

Touch of elastic on the nose, similar to some Grenache blanc, touch of honeysuckle on the palate. Enjoyed with slow cooked pork. Was told by a friend that only a few bottles remain at the winery.

Easy drinking paired fantastically with burgers. Could definitely tell it was carbonic maceration. Delightful, but obviously a drink sooner than later wine.

Drank while celebrating my fiancé graduating PA school at JC Holdway in Knoxville. Excellent oyster shell and acidic backbone. The main note that stuck out through was a struck flint taste, really interesting. Going to wait till 2024 to check in on this again.
