July 31, 2022 - A Palo Cortado from Denomination of Origin Jerez-Xérès-Sherry. 100% Palomino Fino. Aged for an average of 12 years in American oak casks following the traditional Solera system. Alcohol: 20% ABV. PH: 3.1. Total Acidity: 4.2 g/l (tartaric acid). Volatile Acidity: 0.75 g/l (acetic acid). Residual Sugars: less than 6 g/l.
Rusty bronze colour, gold at the rim. An atractive bouquet, mildly aldehydic with notes of apricots, grilled nuts, orange peel, singed lemon toffee and creamy vanillin oak. Below mid weight on palate with flavours of burnt caramel, walnuts, sultanas, earth and cream. Light and fresh with good acidity. Dry with some savoury nuances with a moderate, saline finish. Not hugely complex or profound but reat value at local pricing for an everyday dry sherry. Drink now, to consume within about five years of release.1 person found this helpful Comment -

July 14, 2022 - Have not had Palo Cortado often. Richer and less bitter than the Finos I'm used to. Still has the quirky sherry tastes and smells. Worth getting now and then.

July 27, 2021 - Mix of salty, nutty, raisin and caramel aromas. Complex. Almost dry, the same combination of oxidative characteristics and the work of the velo. The high alcohol shows and combines with some bitterness in the finish.
