  August 10, 2021 - This is really impressive and in such a good window of drinkability! Layers of yeasty/leesy complexity with baked apple, bits of autumn spices, lemon custard that convey a hefty impression but no sacrifice of freshness and minerality. The zero dosage also provides plenty of inherent freshness but the ripe fruit holds its own quite well. Everybody liked this an awful lot! YUM.

  March 23, 2020 - Dim Sum Club at Imperial Treasure Teochew (Imperial Treasure Teochew, Ion): A really pleasant, deliciously balanced Champagne - with some upside yet, but it was quite a delight to drink even now. The nose had a bit of an oxidative character, with browned apples and pairs touched with yeast, mineral and a squeeze of citrus lime pips. The palate struck a rather different tone though - there was a nice rich depth and a tremendous sense of energy and length to it, but I was most impressed by was the detail and precision of it all, with a laser-like cut to its mouthwatering flavours of green apples, lemons and lime zest, this zooming into a long, zesty, minerally finish; all this couched in a very fine mousse and plenty of bright acidity. Lovely with the dim sum we had today, but I can see this improving over the 5-6 years and beyond.

  February 29, 2020 - Excellent champagne. Tight lively bubbles with vanilla brioche flavor. Very unique stuff.
