    February 20, 2021 - No hint of advancement. Rich golden yellow appearance. Acidity has subsided but this wine is not flabby. Predominant nose and taste of honey...the fancy single-flower-varietal from a farmer's market kind of honey. Up next is a montage of fruits prancing by the palate with a yakity-sax soundtrack. I taste apricots (dried/jam) and fresh kiwi but there's a lot more complexity.

    This bottle would be Exhibit A in the lecture for "the older I get, the more I just want to drink white wine".

    January 16, 2021 - Superb aged chenin. Dark yellow, near tawny brown at edges, muted on open, flourished as it warmed. Aged lemon, dried yellow stone fruit, apricot, mineral, a bit of carmel, delightful balance, hints of acid bound honey sweetness, clean long finish. DRROBVINO is spot on, though understated perhaps, and the acidity of this bottle was less pronounced. Really pleased this had not gone south, and the tertiary richness excelled. One more in cellar, fingers crossed to try in 6 months or year, though this seems perfect now.

    April 4, 2020 - 2nd of 4 bottles, last one was consumed 3 years ago.
    Opened yesterday, had a few glasses, and placed back under cork until today.
    Aromas of quince, apricot paste, some lemon zest in the upper register, with a drizzle of fresh honey and quite obvious wet gravel.
    On the palate, dried apricots, some peach, beeswax, a tad of residual sugar, with lanolin and wet rocks coming through on the tense and puckering finish.
    Will likely continue to evolve and hopefully improve for the next 5 years. Drink this now through 2026+ or so.

    February 16, 2020 - Initially seemed to show a bit of browning at the edges, which disappeared with an hour of air. Weird. Once it opened it exhibited a rather flamboyant nose of ginger (lots of ginger), white flowers and citrus. On the palate, lots of pit fruit, citrus pith, and a faint bit of honey. Good balance, plenty of acidity, and a very “chenin-ish” texture. Enjoyed it a lot.

    February 1, 2020 - Opened at 10AM, tasted at 3PM at a chilled temp. This is my final bottle of 2010 Clos Habert and with my palate having changed the past 5 years, I wondered if the demi-sec/higher RS would bother me. To start, in terms of any oxidation, this is clean and solid. It is starting to soften on the acidity, which has allowed some of the spicy honeyed quality to come through more clearly. Green apple, peach, nectarine and concentrated pineapple, all driving the palate. The texture here has a decent level of glycerine, but there is enough acidity remaining and energy to make it all work. Finishes with a squeeze of lime and pineapple. Overall, it's a bit sweet for me but in the Chidaine way, and similarly as Champagne Vilmart seems to do so well with their wines that are higher dosage yet jammed with balance and acidity, this Chidaine works much like those wines. Aging well, but advise serving very chilled to help crisper the wine, or let it get warmer in the glass and experience the more honeyed texture.
