    December 27, 2022 - Wine needed some time to open up. After about and hour or so the wine evolved from having a stingy bouquet to a gorgeous one (great floral component). Great expression of Blanchot and the vintage. Very linear quite unctuous and very silky.

    October 21, 2022 - The one with Capital Rs (Kolabo): Capital R

    This came alongside the 2016 Ramonet BBM in the same flight. Visually, the two bottles literally looked to be the same age and with the first nose, Reticent on the opening and pretty linear so after a couple of sips, I put it aside to let it open up and that proved the right decision. After about an hour, it opened up to layers of green lime, jasmine, grapefruit and pomelo. Packed with minerality with a good sense of density and richness.

    I stuck to my guns this time round and called 2015 Ramonet while being in utter belief that this could never be a Roulot. I have never tried Raveneau before but this wasnt showing that typical Chablis character. Imagine my disbelief that this was a 2004 Raveneau! I guess Chablis is Chablis and Raveneau is Raveneau!

    October 21, 2022 - Popped and blinded/poured into a Voss bottle. Served beside the '16 Ramonet BBM, this appeared/tasted to be just as young/fresh, if not more! Served cold, with the nose somewhat reticent. Only after 1+hr later did it start to open up, with scents of lemons/citrus, bits of white-flowers (even after more time/air). Very fresh on the palate, packed with minerality but yet had a nice sense of richness feel to it. This was still showing very young, and will no doubt improve with more cellar time!

    August 3, 2022 - Drank over 3 hours. This is a beautiful concoction of ripe white stone fruits and various citrus fruits. Ripe white peaches, apricots and nectarines blend with grapefruit, lemon and lime juice on the palate. This has a memorable mouth-filling texture that provides weight to the fruits on the tongue. A firm yet subtle minerality running in the back keeps the decadent fruits from being tiring to drink.

    Drank with garlic scallion soy sauce broiled sword fish cooked to the texture of tofu. The flavors, textures and finishes of the dish melded perfectly with the wine. One of the best wine-food marriages I've ever had. This wine felt designed to exhibit the variety of white and citrus fruit, and that was exactly what elevated the already excellent swordfish to a divine level.

    Sometimes things align perfectly to form a great experience, so my review is very positively biased by it. The nose and finish definitely could've delivered more, but this was paired the right way by a great somm with a perfect dish served by a great chef.

    August 12, 2021 - This bottle was fresher than the one opened last week and showed beautifully although ready to go in my opinion. Lovely concentration and complexity on the finish.
