    January 14, 2021 - Fantastic. After about two hours open in the bottle it really comes alive. Saline nose and intense, laser focused minerality. Wow.

Iodine, a touch of truffled honey which receded, chalk, and prominent lemon and bitter citrus. Fantastic acidity to give it backbone. Real Chablis right on the cusp of maturity, and a leaner version of La Forest.

    November 6, 2020 - Last minute replacement for my pre-moxed blt tonight with this from the exact same case. Yea! Pristine and could easily go another 3-5yrs. Time for Dauvissat to switch to Diam corks too! PnP in my smaller no name version of the Riedel Montrachet glass. My glass has the same shallow bowel as the Montrachet but holds about 20% less wine. Perfect for chablis!.

    This saw about 20 minutes of air as a last minute replacement. Light straw gold color. 10 mile an hour sea breeze saline, mineral and citrus aromas. Has that regal placid Dauvissat elegance & purity buttressed by racy; both stream bed & quarry mineral notes, lemon, orange peel, green apple and nuances exceeding my ability to describe. Intense, concentrated and at the same time resolved and classy. Think, sleek 1971 silver Porsche 911 Targa vs. a beautiful sky blue '69 Chevelle SS 396 convertible with white interior. I love both cars but prefer the 911 Targa if I could only have one. This is a '71 911 Targa. 13% alc. Bummer that my first btl tonight was a dud but this one was a great ride on mythical north coast road. My last of 3 btls.

    November 6, 2020 - Premoxed even after the most pristine provenance possible. Locally sourced and brought up to me from store temp controlled basement. Then immediately placed in my temp controlled wine cabinet. Dauvissat needs to go diam corks! A second and last btl was perfect tonight. So frustrating!
