December 15, 2023 - Last one of these was a couple of years ago and I remember it fondly.
This one was another gem. Took a while to open up. It was a bit clunky and disjointed on open. Very tight. We decanted it. As it warmed up and got some air, it kept unfurling layer and layer of nuance, complexity and joy. After 2 hours it was singing.
Exquisite sweetness of fruit on the palate. Saline and salty. Classic oyster shell.
I think this is one to keep sleeping in the cellar for a while longer. Or I suggest decanting and serving at room temp if you can’t resist now.

December 10, 2023 - The ‘10 Les Clos was exceptional, and seems to be at the early end of what should (premox willing) be a long drinking window. For my taste in whites, I would prefer to drink this now or over the next few years, as it’s just so vibrant right now, but I would expect this to develop favorably for a long time depending on what you’re looking for in your Chablis.

The nose was intensely perfumed, especially with air and as the wine warmed a bit, with white florals, lemon oil, sea breeze / minerality, mint, sage, and toasted almonds. On the palate, the wine is medium plus in body, very concentrated with white stone fruit and white florals, lemon and lime, and towards the finish, intense minerality along with toasted nut and lemon oil notes. This has a perfect combination of sweetness, minerality, and acidity, with just a hint of this toasted nut / bread note from oak addiing complexity.

May 26, 2023 - During a Paulee dinner, so only brief impressions. Tasted next to the 1966, which was still in excellent shape. Both wines great. This one obiously much more youthful, with great reductive aromas, fresh, precise. 96-97

January 13, 2023 - Slightly nutty, but otherwise super clean and fresh with bright acidity. Drank side by side with 17' Lafon Montrachet, and it was a bit of a toss up for me which of the two I preferred as I was somewhat underwhelmed by the Lafon tonight given expectations.

November 30, 2022 - 2010 Fevre and Dauvissat Grand Cru Chablis (Oceanaire, Mpls, MN): Light medium gold color. PNP, drank a glass plus over an hour. Drank in a flight with '10 Preuses. This was simply sublime; wow what an ethereal nose of Meyer lemon, ocean, spice, lime, woodsy, and a touch of lacquer. The palate exudes precision, full bodied and rich, with layers of citrus fruits, Meyer lemon, orange zest and Grand Marnier-like liqueur notes, and the dry extract and mineral intensity then just captivates as the level of penetration just rises. Thoroughly impressive, immense, and focused. Damn. 97+ to 98pts.

September 19, 2022 - Coats Family Cellar Tasting (Wine Cellar): Bright mid yellow-gold in colour the aroma is lifted and fabulously intense with classic oyster shell, and savoury nuances. Complex notes of cream, lemon verbena, old oak, and melba toast permeates and intrigue.

A focussed entry, this medium to full-bodied Chablis GC exhibits freshness, chiselled saline-edged acidity and amazing depth of flavour. Plenty of minerals, almond, beeswax, white pepper, toast and fresh herbs elucidate this complex wine. It seems to have a Gruner twist with the white pepper and tidal pool element. Linear with that floral lift in the mid-palate, the wine has layers of flavours and incredible complexity that seem to persist forever on the back palate with precision and purpose. A magical wine.

August 6, 2022 - A fine yellow color. Quite young in appearance. A really fantastic nose of lemon and oyster shell. White fruit and some spice. On the palate, this was just immense and powerful with such incredible precision throughout the palate. It continued to evolve with notes of lemon and Seville orange extract combined with a mineral undertone. That ethereal combination of power without weight. Texture was that of silk. A singular expression of Chardonnay that carries both a saturating palate and a bracingly energetic acids driven core. Really tastes of the sea. It has it all, and is hard not to drink but I think has more to offer.

May 11, 2022 - Really fantastic wine that just continued to change and evolve as we drank it. Classic limestone spine overlayed with delicate fruit and citrus notes that ebbed and flowed. Ethereal. Perfect now but will likely cellar for at least 10-15 more years.

March 5, 2022 - PNP. Drinking great, nose shows lemon and oyster shell. The palate is deep with a sublime texture and tons of acidic zing on the finish.

February 6, 2022 - Provided a superb comparison to the 2007. Both were drinking so well and both so quintessentially Chablis. The 2007 was a little more expressive and open for business. More reticence for the 2010. But, everything is exactly in place. So precise and ‘just so’. The 2010 had a little more power and intensity. Opened up with some time in the glass and became more expressive. I took this wine to a dinner 3 years ago and it was superb, but only unfurling and showing its brilliance after several hours breathing. This bottle was as good/better and took less time to reveal itself. Anyone with some of these bottles in the cellar has a real treat ahead for themselves. I only have one left …
