    October 3, 2021 - Paired with Field Mushrooms on Puff Pastry with Chevre, Fresh Arugula and Fig Glaze. Cork completely saturated, base of neck fill. This wine was a surprise to me. I've never had a 50 yr old wine, and this was excellent. Nose of leather, earth, and truffle. Wine looked a bit thinner than expected. Tannins still present, leaving a slight dryness to the mouth. Savory notes, long finish.

    September 8, 2021 - Epic Bordeaux for an Epic Birthday!; 9/1/2021-9/12/2021 (Paris & Bordeaux): From a magnum. The surprise wine for me. I've only had one other '71 Bordeaux (an HB) and it seems maybe this is an overlooked year (or good wineries produce great wine even in the tough years). This was still amazingly young, but there was just a peek of what a well aged Latour could be. Slightly less wound. Slightly more forgiving. Still so much power but with a hint of softness. Fun to try.

    July 11, 2021 - cork was 95% saturated but carefully and safety extracted. what an unbelievable nose... sanguine, saline, leather, mushroom, floral, dusty. palate is refined, evolved, savoury, iron and minerally, plenty of tannin. 50 years of aging on this beauty and it smells and tastes like every second of it was worth waiting for. complex and outstanding!
