    December 16, 2023 - Opened 3 hours in advance, just pouring a glass to open the neck of the bottle. Nott decanted by choice

    Drank over a dinner of 2 hours in Zalto Burgundy. Pairing was a modified cow au vin using sangiovese and with the addition of granny smith apples

    This Brunello is a fabulous declaration of balance between the secondary notes and a glimpse on the tertiary. Mature fruit starting to play with tobacco leafs, china, dried oregano, sage and thyme.

    Soft but with stable acidity, elegant tannins, present but never harsh.

    My last bottle Costanti Riserva 2007 but glad I had it tonight

    June 16, 2023 - Not a pop and pour wine. Closed tight as a drum on opening. Slowly came around with 2 hours of air. Best glass (and the only really excellent one) was the last glass poured 2.5 hours after opening the bottle. If you don't give this 2+ hours of air, you are missing what it has to offer...which is a lot of delicious black fruit and refined tannic structure. Be patient and decant for minimum 2 hours.
