    October 23, 2021 - 8-hour slow-ox; caramelized sous bois with subtle tobacco, molasses and salt air aromatics. Harmonious and balanced plum, cherry, red raspberry palate with a touch more tobacco and a cumin note. Finishes ultra-long with dry underlying tannins and the most interesting watermelon memory at the very last moment. This was a great bottle - an interesting melange of barnyard, fruit and spice.

    September 23, 2021 - Similar to the bottle I had back in January. I opened and slow ox'd for two hours and then poured through a vintorio. Red fruit on the nose. The palate is dark cherry, tobacco and hints of licorice. The finish is moderate to long. A very enjoyable bottle of wine.
