    February 9, 2020 - Chapoutier Le Pavillon Ermitage 2012.

August 22, 2019 - I had this wine for the first time back in February and it blew me away with its incredible precision and depth as well as the unique aromatic profile with tremendous terroir expression. This bottle, didn‘t perform that well. One problem was that the wine was not decanted. The longer it sit in the glass the better it got with the last sips after 2.5h in the decanter and glass being the best ones and reaching the 95 point level. So give it a lot of air.

TN: Closed, muted and dusty at the beginning and only with a lot of swirling and time it revealed the pitch black fruit core, the signature ash/volcanic/rocky minerality along earthy, meaty and herbal notes. It never reached the clean, highly precise expression combined with an amazing intensity and weightlessness the other bottle had but approached this level of excellence more and more the more air it got.

Decanting: I would give it at least 10 hours in the decanter.

February 23, 2019 - Matter of Taste (Zurich): Chapoutier Masterclass with Maxime Chapoutier
Oh boy, this is extremely good! Tons of hedonistic pleasure paired with a lot of intellectual appeal - this is quite a singular wine: Smoke, dark soil, ashes, very volcanic almost like an Algianico from the Etna region, inkiness, and a block of dark fruit to cope with all this singular mineral expression and intense earthiness. Very intense, deep and rich but with a sense of weightlessness and a long finish. I can only imagine how good this will be with 10 more years of age and even higher complexity and an even softer structure (it could . Very well the best Northern Rhone Syrah I had to date and the winner in the strong line-up with all four Le Pavillon vintages from 2009 to 2012.
