    September 14, 2014 - Very tightly wound and reticent at first - this was double-decanted an hour before serving, and really transformed with the air. There's a great deal of complexity here; a spectrum of fruit ranging from tarter gooseberry and lime flavours to riper red apple and stone fruit notes, high toned floral and herbal accents, and a vividly stony/saline mineral undercurrent, and the balance is impeccable with moderate sweetness matched by powerful acidity that keeps it very focused and light on its feet. Incredibly refreshing and all too easy to drink. This is going to be something special with time.
