    February 24, 2019 - 100% Palomino. 32 months under flor; 8 months in butts; 24 months in tanks. Decanted, now 2h later. Amber gold, almost copper color. Baked apple, mild nuts, flowers, sea spray, and chalky mineral aromas. Palate with both fresh tart and baked apples, chalking minerals, flowers, hint of nuts and saltiness. Nice long finish. Nice depth of flavor and weight. Really interesting - the flavors of a complex fino sherry but more subtle and less intense. Lovely with asian inspired cod with mushroom sauce. 11.5% abv.

    July 20, 2018 - Deep amber golden color. Nose initially somewhat closed, swirling coaxes some saline and strongly nutty notes, earthy slightly musty — mushrooms, per J. Palate closed at first as well, opens up a lot with time, apple skin, good acidity, rounded nutty sherry flavors; after 1-2 hrs, oxidized/nutty notes recede and it becomes more pronouncedly fruity with slight lemony flavor. Enjoyable with fried chicken, could see it going well with fatty cheese and jamón. 11.5% abv. Polarizing for sure with its strongly oxidative flavor, but I liked it, very interesting. 92 pts

    April 7, 2017 - Dark straw color in glass. Nose recalls fino sherry, nutty, saline. Very unusual wine, saline and savory, oxidized, at first fresh fino sherry almonds, sea air, then darker earthier mineral notes take over, making this quite unlike any sherry I have had. Quite good with a roasted cauliflower walnut salad.
