Palate: Granny smith apples sprinkled with salt, rubber, booze. Fairly sweet but with sharp acidity that cuts through it. Big bubbles.
This would be fine in a mimosa, but wouldn't make a French 75 with it. -

November 15, 2023 - Pop the cork and remember the wild grapes in the woods popped from their purple skins. Vinifera escapes like old memories. A solid balanced Sparkling with well integrated sensations. The graceful mineral yeasty clinging middle gives it depth as well as suggestion of concentration. Well done.
