    May 23, 2019 - Those wine was sublime. If you have had the pleasure and luck to drink older Dom, this one delivered all the expected beautiful old Champagne hopes and dreams. Still fresh with apple, lemon custard, bitter fruit notes like citrus peel. This had just the right balance of caramel and butterscotch coming up in the finish where the mineral intensity still shows through.

    April 23, 2019 - Dom Perignon and 3 bottles of 1996 Red Burgundy (Yan's China Bistro, Walnut Creek, Ca.): With the Wine Group, Nose of earth, apple, grapefruit, citrus, shale, slate, and brioche, same on the palate, big body, elegant, at it's peak, much younger than the last bottle from this cellar, creamy texture evolved during the tasting, very rich fruit, mouth filling fruit, and a long, long, long, flavorful finish, I would enjoy now rather than hold longer.     March 12, 2019 - Bronze gold almost a touch of rosé look about it. Salty creme caramel, toffee pear notes but still fresh and just about enough acidity holding it all together. Very light fizz only. Very complex on the palate, so delicious and uplifting. Time to drink these on a more frequent basis but should hold steady for next 3-5 years. Thought provoking stuff!

    (Moët et Chandon Cuvée Dom Pérignon) Fine, elegant nose; almonds and cream. Fresh and balanced palate, vibrant acidity with a creamy-edged texture. Full, almond notes. Great finesse here. Wonderful structure for future ageing; needs a further five to ten years and should probably drink beyond that. Excellent.
