    January 28, 2023 - Decanted for an hour. Cherry nose, medium mouth feel with continued cherry notes, acid, and salinity, medium to long finish.

    August 30, 2021 - Pronounced nose intensity with notes of peppermint, spices, cinnamon, green bell pepper. Medium+ acidity and tannin. Feel youthful and probably just started on the drinking cycle. Decanting will help smoothen the tannin.

    Well, maybe I spoke (and drank) too soon. Now at 6+ hours, damned if it hasn't started to show ripe cherry, some sap, and overall much better texture until you reach the somewhat grainy tannins. Here's a novel idea if you open one soon-decant!!
