It will improve, but given how slow the evolution has been so far its hard to say how long it will take. And acidity is not that high…

    July 1, 2023 - Well my good friend Michael, who got me started on wine, is celebrating his %#th birthday on Monday. They came out for dinner so I decided to open some really special wines to celebrate. This bottle and a bottle of the 2012 Dominus. I opened the bottles three hours prior to dinner which was grilled steak with some grilled NJ corn. This is an amazing bottle of wine. Dark fruit on the nose leading to a palate of blackberry, blueberry, black cherry, plums, figs, tobacco and cedar. The finish was extremely long. Just a great bottle of wine and my preferred of the evening.
    As an aside and I know he will be laughing when he reads this. As the bottles were slowly being consumed - he had me open a half bottle of Switchback Ridge Cabernet to pour into the wives' glasses as he figured they would not appreciate the Verite as much as we did.'
    Oh well, boys will be boys, no matter how old we get.

    January 3, 2021 - Wow, wasn't expecting such an impregnable wine. Gave it a total of 6 hours open before drinking and still found it a bit difficult in its density. The cab franc flavors are hard and, for us, best enjoyed after softer wines before it (a 1982 Palmer and 2006 Cardinale, in our case last evening). My guess is that this wine will be better after it turns with age, but I'd estimate that is 15 years away. I have two more bottles and will probably let them sit at least another decade before trying again.

    September 9, 2020 - Third bottle, and this time gave it more air, which made all the difference (4h double decant, then poured after chilling to 16C). Lively bouquet of pain grillee, bramble fruit, incense smoke. Palate of chocolate, red fruit, cherry, baking spice. Medium to long finish with plenty of verve and tension. At times closed up then reopened somewhat. I think some wine critics call this a version of Cheval Blanc or a top St Emilion. I think that is accurate and what really struck me was how classic this was - yes it has plenty of fruit and chocolate but if tasted blind does not come across as California. Still seems young, probably better in another year or two. 95-96

    August 30, 2020 - Double decanted and let sit in the bottle for 3 hours with cork loosely fastened. Much more open palate than last time with dark berries, graphite, milk chocolate, earth, and a long silky yet tightly coiled finish. By the 4th hour after opening it was at its apogee and had silkier tannins and more fruit and chocolate. Next time will open even earlier. I’d agree with some of the comments that this is very classic in style comes across much more St. Emilion than California. 95 with potential. Needs more years or plenty of air if drinking now.

    August 2, 2020 - Decanted an hour before dinner and it needed more time to open. More reticent than my bottle a year ago. Red fruit, cherry, cinnamon bark and a nose that (eventually) yielded some smoke.

    December 24, 2019 - More please! Wonderful, balanced wine. Soft but still complex and full of flavor. Subtle dryness initially with hints of several flavors including dark berry, pencil shavings. Effortlessly wonderful, almost too perfect. Enjoyed tremendously for Xmas eve.
