    Double decanted. Rather austere now by comparison to my previous experience. Nevertheless, intense nose of wood toast, menthol, spice, and dark strawberry. On the palate, fantastic acidity. By itself, mouth-puckering tannin..needs a lot more time to soften. With Miyazaki A5 Wagyu, the tannin subsides a bit and provides a perfect complement: soft enough fruit to let the beef shine, and balanced acidity to not make the wine seem astringent. Come back to my next bottle in another 10 years or so...

    June 26, 2014 - Tasted at winery. Just spectacular. Dark, brooding, powerful, earthy...but a bit astringent. The nose is very complex, but showing primary flavors right now. It was clear I was tasting for potential as this is very tannic now. According to Confuron, we should wait at least 10 years to drink this.
