    May 17, 2021 - Made with biodynamically farmed Pinot Noir (85%) and Chardonnay (15%). 12,5% alcohol. Tasted blind along with another Soter Rosé and a rosé Champagne.

    Medium-deep salmon red color. Somewhat evolved nose with aromas of sweet wizened apple, some yeasty autolytic notes, a little bit of smoke, light gooseberry tones and a hint of ripe raspberry. The wine is dry, lively and medium-bodied on the palate with somewhat evolved and slightly dull flavors of spicy red apple, leesy yeast, some chalky minerality mineral tones, light evolved notes of almond paste, a little bit of creaminess, slightly dull and musty hints of damp wool and white cheese rind and a touch of crunchy redcurrant. Good, high acidity with a fine, persistent mousse. The finish is fresh, lively and quite long with flavors of crunchy red apples, some tangy salinity, light lemony citrus fruit notes, a little bit of tart lingonberry and redcurrant, a slightly musty hint of white cheese rind and a touch of leesy creaminess.

    A quite pleasant and nicely evolved rosé fizz, but one that has also developed some slightly musty notes like damp wool and white cheese rind. While the rosé is pretty good otherwise, it doesn't come across as particularly interesting and those somewhat unpleasant dull notes take their toll on the score. Feels way overpriced for the quality at 62€.

    January 1, 2020 - New Year's (Chicago, IL): The thing that sticks out here is this really odd bit of spice and some candied red fruit flavours. A touch sweet with a slightly shorter midpalate and finish and coarser bead, but nonetheless quite enjoyable.
