    December 8, 2021 - Dulwich Wine Society Premium Australian Cabernet Sauvignon: Beef tomatoes and tomato leaf. Beef stock and pepper. Wonderfully savoury. Long and very complex. The wine of the night.

Seems very austere after the ’10 Edelstone but it’s perfectly ripe, with gorgeous black fruits, medium dusty tannins and classy but soft oak. Medium weight, and even along the palate. 84% cabernet, 13% merlot and 4% franc. Quite approachable given that composition. Should continue to age nicely for a decade at least. A triumphant pair of 2010s from Henschke.

    July 6, 2018 - Made in the style of Bordeau rather than Napa Cab. Some medicinal notes and vegetal palate but enriched with awesome fruit and and a dash of black magic.

    Anyway, the grapes are awesome. The wine making is awesome but Aus cab sav... not totally awesome ... according to this Shiraz man.

    Should age well. Drink in 2020+

It is supremely deep, and long, but it's ripe fruit dominated with silky smooth tannins and the wine becomes anonymous in the end. Prune, fig, sweet cherry liqueur, cola. Only 6-7 years old. Feels maybe 10 years old? The prune, fig note is dominating and I am not sure where the wine has to go from here. Without the label stating the wine being 84% Cabernet Sauvignon I probably would not have guessed. Delicious but not a top cuvee.

The palate is plush and velvety and it is a wine that really builds in the mouth. Tannins are substantial but sweet and spherical. Should age for decades.
