    January 22, 2015 - A take on pale ale by Cantillon: instead of being a blend of pale malts and wheat, this is a 100% pale malt beer; instead of being made with only aged hops, a 50/50-blend of new and aged Hallertau hops are used here. The beer is also dry-hopped with Saaz before bottling.

    Deep golden yellow color, reminiscent of a standard IPA, with a light white head. Towards the end of the bottle the sediment starts to stir, turning the beer opaque orange. Dirty, bretty nose with some farmyard notes, but also with an overlaid hoppy veil of ripe citrus fruits and even a hint of pineapple - perhaps a synergic aroma from hops and brett? Bone-dry and really sour on the palate with light body and fravors of citrus fruits, some tart tropical fruits and earthy hints of brett. Very ample, soft and billowing carbonation. Bone-dry, crisp and bracingly sour finish with soapy and pithy bitterness - yet the bitterness and sourness don't clish like they often do in sour IPAs. Peristent, nuanced flavors of grapefruit zest, pineapple, citus fruits and hints of leather.

    A wonderful wild ale, like a Cantillon Gueuze that has been modernized with very sensible, stylish hand. The beer is more bitter than standard Cantillon lambics, but fortunately not excessively bitter, keeping the beer very balanced and approachable. As the beer is this young, the hoppy aromatics are still very much present, but I can imagine the beer will develop nicely towards the more classic Cantillon style with age, as the hop aromatics and, later on, the bitterness fade away. A spectacular non-lambic "Gueuze" and a real find at 13€ for a 75 cl bottle in a bar.

    October 18, 2014 - Excellent. Drinks more like a fruit wine. The colour of ruby grapefruit juice, with heady fruity aromatics too. Wonderful palate with just a tinge of bitterness, which complements a mainly sour flavour - a nice sourness; a lingering, evolving sort of acidic, rolling, gentle sour flavour. Must be phenomenal as it ages but i couldn't wait. I loved it.
