April 8, 2023 - Stunningly good wine. Everything you want in a syrah. Some savory notes, good fruit, silky mouthfeel, and long finish. Drank alongside a 2012 Clos des Papes, which was a nice counterpoint (sweet Grenache fruit). Impressive how well this has aged.
July 11, 2020 - Tasted blind, drink like a Napa Cab. Red/black fruit, dark chocolate notes with subtle oak and supple tannins on the finish.
August 17, 2019 - These older Pax wines are great! Still very youthful, but not the total bruiser it was in its youth. Great density of black fruits, but with lively acidity and great varietal characteristics. Blackberry, roasted meats, minerals, and spices. Beautiful integration.
May 3, 2019 - Complex spicy and smoked meat nose. Fresh out of the bottle; began to tire a little after 2-3 hours. Beautiful deep purple color showing almost no sign of aging. Tastes are very well meshed, tannins soft. Smoky, meaty flavors, still with lovely earthy fruit. No sharp angles; long, mellow finish. Probably at or just barely beyond its peak; a very nice bottle. NOTE: cork was starting to crumble.
December 30, 2018 - From magnum. Slo-ox x 3 h then consumed over 3 h.
This really rocked. Medium body, layered fruit, integrated and nicely balanced.
No tertiary development and plenty of time left in this format.

November 11, 2017 - Really nice. Still very balanced and no heat on this at all. Red fruit dominates with just a hint of spice underneath.
November 5, 2017 - From magnum. This was great! Perfect match for waygu burgers. The age added a smoothness and seamless character to the wine. Still with rather primary fruit, but loaded with pepper and meat notes. Perfectly drinking CA Syrah. Really enjoyed. No heat at all.
