June 2, 2023 - Pale straw colour in the glass. Medium bubbles and mild brittle mousse on the pour. Nose of green apples and some tasting brioche and yeast notes. Lovely freshness in the glass and taste of white peach, yeast, brioche and toast with a creamy finish. 6g/l dosage. 100% chardonnay. Disgorged 02/2021. Excellent!

February 24, 2023 - Enjoyed with a group of wine snobs but probably not best served with non wine drinkers. Very crisp, moderate effervescence, savory. Some white peach, bit of a apple, and what stood out was white pepper and mango skin (is that a thing??). This seems like it should be paired with food.
